Miso is not only for miso soup, and is a very useful Japanese ingredient! I have many miso recipes and this time I’d like to show you some meaty recipes with miso. Hope you find more ways to use your miso and enjoy the dishes!

★Niku Miso (Meaty Miso)
[Ingredients for 2 - 3 people]
*All measurements are in US standard format
0.45 lb Ground pork
(approx. 200g)
Miso sauce:
To taste Cooking oil
1/4 cup Red miso
1 tsp Soy sauce
3 tbsp Sugar
2 tbsp Sake (for cooking)
1 tsp Grated garlic
1 tsp Grated ginger
To taste Black pepper & Red chili pepper
When you cook the pork with the miso sauce, add
1/2 cup Water
You can eat with
- Soft tofu (green onion as garnish)
- Lettuce (as lettuce wraps)
- Noodles (Add some sesame oil to mix with the noodle)
- Rice etc.
★Miso chicken steaks
[Ingredients for 2 people] *All measurements are in US standard format
2 Large chicken thigh pieces (or 4 small chicken thigh pieces)
Miso marinade:
4tbsp Miso
2tbsp Sake (for cooking)
2tbsp Mirin
2tbsp Honey or Sugar
1tsp Grated garlic
1tsp Grated ginger
When you cook, add
1tbsp Sesame oil

i tried somewhat the same thing, didn't waste anything with wiping, was just watching it closely, turned out great maybe even better : miso burns easily so it makes a great contrast to whole chicken

what can be the substitute for sake on the ground pork miso? also how will it taste without sake? 🤔

Thank you for watching! If you don’t want to add sake, it’s fine and you can ignore it or white wine will be good. The sake will help to neutralize the smell of meat and add some richness and umami but it can be optional. If the pork miso taste is too strong without the sake, add a little more water.
What to replace sake (alcohol) with? Alcohol free sake and mirin?

Thank you for watching! For these recipes, I use sake for eliminating the smell of meat and bringing out the dish’s mild umami, and making the sauce more consistent and less solidified. So if you don’t have or want to use sake, it won’t taste the same from the original recipe, but you can use more mirin + a little bit of water + less sugar (from the recipe). Mirin will make the dishes sweeter, so be careful using it too much. Also a lot of Japanese cook the sake well to allow the alcohol to evaporate when they cook for kids and for people who don’t like alcohol. Hope this tip helps your cooking!

@@chibichibichef i only have the yellow miso at home but want to buy the red or the very dark brown miso to try it out. Maybe you could also tell us how to recognize good quality miso. I heard if alcohol is listed in the ingredients it is low quality and maybe not properly fermented. Is this true? How do you choose your miso?

@@Finn959 Sounds great! I’ll create a video for red miso sometime soon:) Wow you know well about miso! Even though the miso contains alcohol, I don’t think it doesn’t mean it’s low quality, but I prefer the miso without alcohol because it’s more natural and flavorful, but they might be more expensive and have a shorter best-before date. I like Hikari Miso brand since they have a lot of organic and additive-free miso kinds!

Then just turn off the sound and read the subs
Background music is distructing, unfitting and unnecessary because it renders useless the voice over since its louder than the voice..... Voice is inaudible or made unclear by the music.... Musi is pain in the ears because of high treble tone....
