A tadjine (also spelled tagine or tajine) is a unique type of ceramic or clay cookware in North Africa.طاجن The word tadjine طاجن also spelled tagine or tajine means "shallow earthen pot" in Arabic. The name came from the Ancient Greek word τάγηνον (tagēnon) which means "saucepan "frying-pan. The bottom base of the tadjine is a wide, circular shallow dish used for both cooking and serving, while the top of the tadjne is distinctively shaped into a conical dome. Earthen cookware such the unglazed tadjine pots have an incredible capacity to simmer the food allowing all the natural and genuine flavors of ingredients to be tastefully released, as the French say 'goût du terrior ' which means a "taste of the earth".
Historically, the nomads in North Africa used the tadjne pot as a “portable oven”, allowing them to prepare food at any time while moving around. The conical shaped lid helped preserve the moisture in the food during their travels. This method of cooking is excellent for less expensive cuts of meat which require long slow cooking.
The word "tadjine" in North Africa also refers to the succulent dish which is slow-cooked inside the pot. Typically, a tadjine is a rich stew of meat, chicken, or fish, and most often includes vegetables or fruit. Other stews such as 'djouez ' can be cooked in a tadjine, but these typically have potatoes in them, not meat.
There are 2 types of traditional tadjine pots. The glazed decorative type that is used to served food in but also the unglazed kind that is used for cooking. Today's tutorial video is about the tadjine used for cooking … which can also double as a serving dish.

    finally bought a tadgine. ' thank the stars' this video was available ; otherwise, it would probably being sitting on the shelf for months because it did not come with instructions and the library has no information. I will watch this several times and write down notes to keep in a handy "kitchen primer'. Good information with important points made and a well organized process. Thank you.

    This is the best video that I’ve found to explain the ins ands out of a tagine. Mine had a bath a year ago and is still waiting to be cured! Shall I bathe it again overnight or just pop it on a low heat for 2 hrs?

    really enjoyed your video. I had a Tanjine before, but it cracked. Guess I didn't season it correctly. (although I followed the directions). But I have another, but have never used it. I will follow your directions to season it correctly. Didn't realize it was a lot or steps. Question? You suggest using a steel plate over the stove. Unfortunately, I have an electric stove. Do you have any suggestions?

    hello henia! i made the mistake of just putting the tadjine on the stove without soaking first and without using a heat diffuser, the result is some fine cracks on the glaze of the bowl (but not the clay itself). can the tadjiune still be used? what else should i do ? tnx!

    Its all fine and nice and all, but since the condensation here is the thing that does the trick, whats the difference to a metal pot with lets say: a lid? if your answer does not use the words culture or tradition, i am very interested in the mechanics or chemistry thats going on. thanxies.

    This question is alittle off your vid, but still has to do with clay cooking. I recently bought a clay bread baking pan (top not glazed/bottom only glazed inside) Bread baking instructions indicate to pre-heat oven before putting pan w/bread in; but clay baking indicates to put clay vessel in cold oven to pre-heat. Nowwhat do I do?

    I bought two traditional algerian tagine one. for cooking and other for algerian traditional bread ( matlouh Khobz tagine ) these tagines. They cook very well especially traditional Algerian tagine( lahm lahlou )they are also used in many other Algerian tagine l need more tagin for chorba and couscous thanks henia for algerian tagines also l miss Algeria bladi 💓

    Oops I think I used a decorative tajine for cooking. It was glazed both on the outside and inside. I didn't soak it either. I should have watched this video before cooking. It's on the stove right now so I hope it doesn't break or something. I'm still a noob in North African quisine :D

    Couple of questions: What is the purpose of soaking it in water if it's to be completely dried before seasoning? And, Does soaking/cleaning it in soapy dishwater impart any soapy flavor to the food? Does the tagine absorb that soapy odor?

    The purpose for soaking the pot is to remove al debris that been collected while transporting and handling, and no soapy flavor is felt in the food after cleaning and baking. Thank you for viewing and your question. Cheers!

    I have the same tajine you have from the Algerian brand Casbah Culinaire. I've used quite a lot of tajine pots in my life but this one is definitely one of my favorites ever, even the size is perfect for big portions when inviting people over. Thank you for educating everyone
