How to use an Ulu knife ~ Squirrel Stew on the Woodstove
This video is a follow up to a video I posted a few days ago (link below) called "The only three knives you'll ever need". In that video I talked about one of my favorite knives being an ulu. I got lots of comments about folks who had never heard of an ulu and wondered how to use it. In this video I made squirrel stew and use my ulu along the way. Hope you enjoy!

My mom is 75 and still cooks a full dinner every night for my dad and every Sunday for all of us and I think she needs an Ulu!!! Cutting all of that seemed so much easier I want one too!!! I'm so happy I found your channel this weekend!

I use to have an Ulu that came with a cutting board with a shallow bowl on one side that had the same radius of the Ulu. It was so handy to through stuff into that shallow bowl and just rock the knife inside of it. That bowl really made chopping things into small pieces almost effortless. Thank You so much for sharing!!!
This is hilarious. I have squirrel issues at my city home (they keep eating the wires on the outside of my house), I was talking about getting rid of them.. and I was told, if I killed one, I would have to eat it. (Had this conversation right before you posted your video) Now I know how.. LOL!!

Ha! The squirrels in the Chicagoland are bold as brass. As far as I know, the squirrels around here have no real predators besides some rare deranged alley cat.

On a Juneau Christmas trip up from Seattle to visit my brother and nephews I bought my housemate an Ulu. One of the fancy ones with a curved cutting board built to display it , I think it was from the ulu factory. We parted ways several years later an I’m here to tell you she never used another knife in the kitchen the whole time I knew her.
Thanks for the video, Brooke! You so inspired me with your Ulu (even though I have seen them used on TV many times) that I ordered one from Amazon before your video even finished! Looking forward to using it. Thanks again!

I get it now, why you would so like an Ulu. The ergonomics, as you mentioned, are vastly better for many tasks. Thank you for posting the explaination.
Flew bush in Alaska and fell in love with the ulu. Made my wife one from a circular saw blade and it gets constant use in the kitchen. Great video! Now you've got me eyeballin' the squirrels in my backyard...

That’s the biggest, most well fed squirrel I’ve seen yet! Maizey Maysey Maisee did a good job with that. I love my ulu knives too. Good to see you rockin that knife!!

Squirrel Stew... u made that look good Brooke! I liked watching how u use ur ulu... rocking back n forth seemed easy on the wrist. I use mine with 2 hands and rock it sideways to chop up my green chili's after they've been roasted, peeled, & seeded. It works great!

Gettin hungry!!!! Great post! I moved to North Carolina 28 years ago from Florida. I took some boys from my church camping. We were sitting around the campfire that night and one of the boys pulled out a few squirrels he had killed and cleaned earlier that day to roast on the fire. I knew I was in the right place!!! very cool knife dear i have seen them before on tv on that show i think they called it the last alaskans i thought it was cool then to . love the dutch oven . and squirrel is always good . love how you cooked it on the wood stove we used to do that alot when i was a boy . slow cooked meals that no store bought meal can replace . thanks dear god bless you .

Wow that's a giant fox squirrel! I used to layer the quarters in a crock with bbq sauce and cook all day. Squirrel is very good food if done right.

Good timing with this vid. I just found and sharpened our Ulu. It was buried practically at the bottom of the junk drawer, which means that unless I had gone looking for it we were NEVER going to see it again. It took me a while to find the right grind angle for the thing but once I got it dialed in it didn't take much to put a good edge on it. I sat and looked at it for a bit after I got that done thinking, "OK, so... Now what?" I got put on "honey do's" over the long weekend so I didn't have time to search out any videos on how to use it. Logging in to KZread your video link popped right up, so now I don't need to. I will try using it tonight when I make dinner and will let you know how it goes. Thanks. Never had a dog that brought me kills but I house sat my sons cat for about two years (why does a "few weeks" always turn into two years when it comes to that with your kids?) and he used to bring me every critter in the neighborhood. Every morning there was an assortment of birds, squirrels, chipmunks, possums, rabbits.. if it was small game it was on that porch at some point. I used to laugh at him and tell him regularly, "You haven't impressed me yet! Bring me a deer, then we'll talk." He was a great cat, I was actually sorry to see him go and I don't usually get too attached to pets that I'm just sitting.

Update: I used the Ulu to cut up some onions and process garlic. At first it was weird and definitely not intuitive to a guy who's been using standard knives his entire life. After a few minutes it started to come to me and by the time I was done with the onions I was kind of getting the hang of it. Then all the onions were chopped and my experiment in chopping came to an end. Processing the garlic was a bit of an adventure, it took me a few minutes to get the angle right to make the initial crush but on the second clove it went really smoothly. Only had two cloves so will have to see how that goes over time. I can't say I fell in love with it but I didn't hate it and by the end I was thinking it might have some merit. I will continue to use it and see if things get any better with time. I did feel how the force of my hand was much more directly transferred to the cutting point rather than traveling the length of the handle and blade first. While I can see where that would be a big advantage, I just didn't have enough stuff to chop to really get the feel for it. But there will be other dinners to cook and more things to chop, slice, or dice to keep trying it out on. Oh, by the by... I had a brief conversation with Bushradical regarding Dei Fratelli products on his page (he was using a DF can to pour diesel fuel into a saw he was working on). I was making meat sauce and was using the Ulu while looking at the Dei Fratelli cans and thinking how apropos it was to be using the cans I talked to Dave about while I experimented with the Ulu that his wife told me about. ;o)

Well, yesterday on my way out of town to go fishing I witnessed a squirrel get hit in the street (sad sight, that I sure could have done without). I decided to turn around in case it needed to be put out of it's misery. I got back to it within a couple of minutes, and mercifully it was already dead. I decided to pick it up and take it home and throw it in the fridge. I cleaned it when I came home. Today I decided to more or less rip off your little recipe here. I even broke out my ulu! Holy crap was my soup (really runny stew) amazing! I somehow really managed to nail it with the spices and herbs I used!
Dang that's a big squirrel. Good job.

Found one of your videos I hadn't seen. The ulu is a pretty good tool. Your squirrel stew looked great. I've had squirrel once that my friend had killed and they fried it. It was pretty tasty. As always, take care.

Ulu's are good knives until your previous video I never thought about carrying one to the field.
Oh my I could eat the whole pot yes that ulu was interesting I’ve seen a lot of women in Alaska using that just amazing that’s got me wanting to use one now good dog brings in squirrel
I have made different sized ULUs. I made one out of a sickle mower section scrap metal. It is good fr leather work and sewing.
Lassie deserved some squirrel treat for making the kill! Lol. Enjoyed the video.
When I was young I remember my Dad bringing back some saurel and rabbits. My mom made stew . I think she was domestic, we didn't have it very much. And yes I like your knife. I need to get me one.

That looked so yummy, I could smell it cooking.
Squirrel is one of the hardest meats to cook tender. It usually takes hours doing it very low and very slow! But, it is a very good meat.

Thanks for another very interesting video While I was out there in Alaska a couple summers ago I bought one of the kinda souvenir ones as a gift for my wife and she uses it a lot in the kitchen. It came with a little hardwood plate. I think she would probably give me "The Look" if I suggested she clean out and cut up a squirrel with it . It probable wouldn't matter which knife I would just get the look if I brought home a dead squirrel.

Funny that I’m just seeing this video and looking to get or make an ulu. Ive known about them for years and realize how much easier they are to use instead of a knife. They’re excellent for caping deer. Figured out the motion when my knife was to dull to use and finished with a hatchet. It went so much faster and easier that I did it on purpose again on the next deer then the thought about an ulu came back to light. Why hadn’t I gotten one already or made one from a circular saw blade……they weren’t toasted yet and still aren’t…..lol
Hey, Brooke. Good to see that Mazie (sp.?) is providing meat for the pot - or Dutch oven, as it were. We have some of those little guys here in the City of Trees. Good on you for not letting it go to waste. Nice demo of the ulu; easy to see the ergonomic nature of the curved blade. Best part of vedges is the skin if we peel them we freeze them and bones to boil down later into a stock or broth after straining it makes a good start to a stew or soup

Nice video! I would add some dark beer to that squirrel and let it sit on that stove for 4-5 hours. I knew the Greenland Inuit use ulus to cut and skin seal but it seems to work just fine with squirrel and veggies :-)

Parboil, dredge pieces in flour, a little cornmeal, salt and pepper. Fry until done.
Looks like some fine eating! I’ve been heckled by snobby trophy hunters for hunting and eating squirrels. I don’t mind though just means more for me. Ive been wanting to play with an ulu for a while. Might have to buckle down a make one. Great vid! Thanks

I used to bring a batch of squirrels home and my mom would make squirrel pot pie. Now that makes me a bit hungery. Our pot pie is not really a pie but is the dough rolled out and cut into squares called slicks and dropped one or two at a time into the pot of squirrels and liquid. I believe it is a German thing.

Most people misconscru that when a Cat / Dog kills something and does`nt eat it , But leaves it in your vicinity it`s a token of thanks for feeding them , We had an old cat Just like yours he`d always kill a mouse or weasel and leave it at the door for us a wolf will do the same , Ulu is a good knife I have one as well great for fleshing Made for aquadic mammals whale , fish , seal ah yes good ol squirrel stew had many a bowl Shake and bake too .Good vid .

good vid as always brooke, but personally I prefer a wooden shafted tomahawk, the head can be detached and used just like an ulu, also you get it's ability as a hatchet plus the shaft makes a great rabbit stick

Yes! I use an ulu pretty much exclusively when I'm cutting veg in the kitchen. I don't really use any other knife for it. I can't say I've ever skinned a squirrel with it though! Haha.

Maryanne M Hi wonder if you can let me know. Does your ulu have both sides sharpened? I bought an Alaskian ulu but one side is flat and the other edged.Much smaller blade than Daisys. I fine it hard to use esp for vegetables. Maybe I just need more practice using it. Cheers Mary

Mine has the one side sharpened. My trick is that I always make sure to have the flat side facing the bulk of whatever you're cutting, and the angled sharpened side on the side where the cut pieces are.

New Subscriber; I stumbled across a video you did with your hubby about your tool choices for “Alone”- I thought that was helpful. We’ve been Ulu fans for years (We haven’t made it to Alaska, yet). It and its Cutting Board/Bowl are invaluable; we gave a set to our new Daughter-in-law a few years back. I’m getting tempted by the Squirrel, but haven’t tried it, yet. I do have a Ground Squirrel problem- Could I borrow your fine Collie? ;-) See y’all around!

Looks tasty. I'd try making a medium dark roux and adding it the last half hour of cooking to thicken the sauce. Now I'm starving... my meatballs are done and I'm ready for dinner.

I felt a bit sorry for the squirrel in the beginning. My dog would love to hunt those down, too. But it's strictly forbidden here, and I am training it to leave wild animals alone. The ulu seems to be a really useful tool, never saw those before. Reminds me somehow of an evolution of stone tools people used thousands of years ago. And your cooking looks really tasty!

Austria. Gamekeepers here are less than happy with poaching dogs or cats and might even shoot them. Might be a different story if it happens on your own land though. And as always - if noone sees it noone can blame you. :-)
I have a tons of scorel in my yard. they make mass with the garbage cans, my plants everything they get to. if you can come down. you can have them all.
I love how pretty and proud Maisie sat when you asked her if that's the squirrel she got... What a sweetie! Reminds me of my boy Drogo (Golden Retriever/Lab)... very confident but very well behaved. By the way... what was that squirrel eating to get that fat?? LOL
