* EDIT: I said in the video that the canner processes at 15 psi, that is incorrect. This canner is able to maintain the temperature at 240-250 degrees to ensure all bacteria is destroyed and takes care of the appropriate pressure to do so based on your location. Here is the correct information taken from the Presto website:
"Botulinum spores are very hard to destroy at boiling-water temperatures; the higher the canner temperature, the more easily they are destroyed. Therefore, all low-acid foods should be sterilized at temperatures of 240° to 250°F, attainable with pressure canners operated at 10 to 15 PSIG. PSIG means pounds per square inch of pressure as measured by gauge. The more familiar “PSI” designation is used hereafter in this publication. At temperatures of 240° to 250°F, the time needed to destroy bacteria in low-acid canned food ranges from 20 to 100 minutes. The exact time depends on the kind of food being canned, the way it is packed into jars, and the size of jars. Pressure does not destroy microorganisms, but high temperatures applied for an adequate period of time do kill microorganisms. The success of destroying all microorganisms capable of growing in canned food is based on the temperature obtained in pure steam, free of air, at sea level. At sea level, a canner operated at a gauge pressure of 10.5 lbs provides an internal temperature of 240°F."

Headspace: 1 and ¼ inch
Canned chicken is a convenience food! It is great for meals when you don't have a lot of time and need to put something together quickly. This meat is very tender and shreddable, making it great for soups, tacos, casseroles, chicken salad, chicken melts, and more. Plus, the liquid inside is pure chicken broth since the meat was only cooked in its own juices!

We became too reliable on mass commercial foods that have degraded us to garbage food in the last century.     I'm so excited that I bought the electric canner. I'm canning the chicken now as I watch you. I did some research on the canner. Watch a lady from the channel call ROSE RED. she is a science professor and did placed an object in the canner to see if it kept the proper pressure. Please watch her so your viewers can feel safe to use the canner.

    It is so easy and convenient. Last night I didn't feel like cooking a big meal: dumped a jar of chicken, jar of broth, and jar of carrots into a pot; added cooked rice...bam, chicken and rice soup! So easy! -Jamie

    Saw a tip on Rose Red Homestead that if you find yourself canning an extra jar, fill it with water and can it. That means you have a jar of sterile water on hand for any wound emergency. Great video, my presto digital just arrived yesterday so I’m canning chicken today , thank you .

    This is what i have been looking for in a video. My dad bought me an electric canner, and i love it. I want to can meat, but I couldn't find an informative video to watch. This video was great.     Thank you and yes, I put it in the fridge and we ate it within 24 hours. But it's never a bad idea to err on the side of caution if you don't feel comfortable with it. Let me know if you decide yes on the canner. -Jamie

    @@joyhomesteadva how long did the unsealed jar sit at room temp on the counter? How long is it safe to be unrefrigerated on the counter after canning if it didn't seal?

    @baseballnan55 this was between 12 and 18 hours after processing and I put it in the fridge after I noticed it did not seal and it was consumed that night. From what I have read, it is safe to consume as long as it was not out on the counter for more than 24 hours. You can also boil chicken for 10 minutes before consuming just to be sure but that is not a necessary step. You'll want to use or refrigerate immediately upon discovering it did not seal.     The steps for canning quarts of raw chicken are exactly the same. The processing time is 75 minutes for pints, 90 minutes for quarts. 1 and 1/4 inch headspace for both. The website nchfp.uga.edu/how/can_05/chicken_rabbit.html has the info you need for processing. They have a full catalog of safe and tested recipes. I hope this helps! -Jamie

    Do you buy your jars and lids in bulk somewhere or do you just pick them up at your grocery store? If you do bulk buy what sites do you use?

    I get my jars mainly from Walmart. A few have come from Lowes. I do not know of a bulk shopping site or location for jars. If you find one, please let me know! I do order lids in bulk from For Jars ( forjars.com ) I really like them and will continue to order from there. I hope this helps! -Jamie

    Yes, as long as it is dried herbs/spices with no thickeners. The most common addition is salt, I just prefer to leave unseasoned so I can add whatever flavoring is needed for the dish I am using it in. I hope this helps! -Jamie

    Any disturbance to processing requires the jars to be reprocessed for the correct times or cooked and refrigerated immediately to avoid spoilage. Make sure the pressure lock has dropped before attempting to open the lid. I hope this helps. -Jamie

    I think the spice rack is from either Walmart or Amazon. I know I got the mini mason jars at Walmart. I always have salt, pepper, garlic powder, onion powder, garlic salt, paprika, parlsey, chives, thyme, cilantro, cayenne powder, cinnamon, ginger, basil, oregano, and cumin on the rack. I also have some tomato powder in the pint jar on the rack. Most of these are grown in my garden and dehydrated. I'm so ready to replenish my herbs! -Jamie

    This is about 4 hours total. It takes quite a while for the electric canner to cool after processing since it is so well insulated, much longer than a stovetop pressure canner. I hope this helps! -Jamie

    That's what I found from research online. It says the canner processes at 15 psi to ensure the minimum safe psi is attained for all elevations.

    It processes by temperature not psi so it automatically adjusts at different altitudes.

    It is completely cooked and ready to go! The meat falls apart to a shredded consistency and can be used as you would any shredded chicken. I hope this helps! -Jamie

    I was looking at this and it said pint and 1/2 pint are for water bath only? I have seen several videos of pressure canning in the pint size. Confused 🤷‍♀️

    Only half pints and pints can be water bathed in this canner due to needing at least an inch of water covering jars for proper processing. Since pressure canning does not require that much water (only to the fill line of the canning pot) half pints, pints, and quarts can be pressure canned properly. I hope this helps! -Jamie

    How many people does one jar feed this size of chicken? I think you can them like this to add to dishes- not eating as just chicken. :) thanks for the great video- I’m trying to decide how big of a jar for family of 4

    Yes, I use these pints primarily to add to dishes rather than as the solo main dish. One quart jar should be plenty for four servings. The process time for quarts is upped to 90 minutes, but the other stpes are the same. I hope this helps! -Jamie

    You can add like a teaspoon of vinegar in there and you won't get those water rings that's just a lime built up from your water

    May I ask can you add a splash of vinegar to the water to prevent cloudiness of the jars like in my stove top one. I just ordered this one today I can't wait.

    I have not added any vinegar to prevent hard water buildup on the jars. There is a coating on the inside of the canning pot, I'm not sure if vinegar would cause issues there. I just checked the manual and I don't see any mention of vinegar in the pot (good or bad). I'm sorry I don't have a more definite answer for you. -Jamie

    In pressure canning you only need the required amount of water for your canner. This canner requires 3 quarts of water and has a nifty fill line to help make sure the amount is correct. Water bath canning is what requires at least one inch of water above the jars for safe canning. I hope this helps! -Jamie
