Im planning on creating a home made gym bench and want to use some left over vinyl kitchen flooring. That seems thicker than this. Will it easily staple down with a heavy duty staple gun? If all else fails I will use an old air mattress. The side that's vinyly.

Why not look for an area upholstery shop and buy suitable vinyl? Hobby Lobby may have some. Walmart? I can't answer to your staple gun as it depends on the length of staple and the type of wood you're stapling into. 1/4" is plenty long, except maybe for the folded corners.

Do you give an allowance for the stretch of the vinyl. In other words do you make the top piece slightly small since the vinyl stretches when you staple it. Thank you.

The plastic, or any cover on the bottom side is for sanitary reasons. The plastic leaves edges smoother with a more cleanable surface than plywood. Less hiding spaces for spiders and other insects. What kind of plastic? It was on the seat so I reused it.

Got vinyl and 1/2” foam at a fabric store. A friend has a great stapler, tools and woodworking experience. Took us several hours, but it’s not bad for our first attempt. Lesson: take before pictures to make sure you can put it back together as before. We took measurements, but a picture is invaluable. Thx!
