How to Steer a Sailboat: It is not how you think!
Practice this drill to improve your sailing skills. Over-using the wheel can slow a boat down and cause undue drag on the rudder. Lock your wheel in place and try steering by your sails. Watch this video to learn how. Once your sails are trimmed correctly, then use the wheel to guide the boat along the path. If you change directions, re-trim your sails!

When I saw the title of this video I knew it had to be something that is not intuitive. When I was learning to fly the instructor said the trim controls your speed. The throttle controls your altitude. That just didn't seem right. I had to try it for myself to prove he was correct. So what you are saying makes a lot of sense now. It's something I may not have picked up on without seeing your video. Thanks for that.
