    You should try the East Hampton Shucking tool, it's the safest and easiest way to open oysters. You dont hold down the oyster down with your hand. It keeps your hand away from the knife. You won't hurt yourself.

    no if your using gloves like these especially if your opening 7000 + a day the shell and grit would go right through the holes not good we use gloves that are enclosed and the outside of the glove is covered in a thin strong layer of rubber the best ever.

    I have not had WiAnno. I find that many of these east Coast oysters do not have a very strong top shell at the hinge. I have better success finding a weak spot to enter the oyster down from the hinge. Just work the tip of the opening knife about a third of the way along the shell and then (very important)bear as much down as sideways (i.e. as much or more vertically than horizontally) . Usually, you'll see the oyster "drool" a bit if you have it right which gives away the split between the top and bottom of the shell. Then you can work your knife in more horizontally.

    I've had oysters so bad.. nothing but shell pieces in every bite. I'd just spit them out. But I've since gone to high end places with no issues.

    This is a way to shuck oysters... but do notice the chef did cut the belly of the oyster using this method... My family owns an oyster farm and we consider this oyster a "cut" and sold for half the price of properly opened oysters. He has the top and bottom correct, but you don't open from the hinge.... and you want to cut the bottom mussel first... WOW...

    I operate an oyster farm as well and we will enter from the hinge and do a slight twist. Then I’ll hold it open with my thumb while I gently slide against the top shell and cut the abductor. The shell just lifts off with zero resistance.
