i assume you are reffering to the armature? its just the skeleton of the build bent into shape. its made out of steel wire or whatever you want, steel usually being the cheapest.

no, it is used to melt the clay a little bit. So the little rough details he just put in will be smoothed out and look more natural.

Is this Super Scuply? Also what what the freeze stuff? It looked like dust removal spray.

Simon used Chavant NSP Medium Clay. Fantastic clay type! It is an oil based clay. The heat warms it up and "glues" it better together. Makes it look more natural and hides that fine line where the 2 pieces of clay were joined. The compressed air just cools it off faster. - Balázs
