How to repair a chipped knife blade? Workshop EP. 8

Тәжірибелік нұсқаулар және стиль

Chipped knife?
Step 1 - use coarse grit to remove enough material to remove the chip. Take 3-5 strokes per side then alternate sides to maintain symmetry.
Step 2. Progress through abrasives from Coarse to Medium, to Fine, to be left with a razor edge and no chip.
Step 3. Test for sharpness and to confirm the chip has been removed by slicing through paper or running the blade over thin plastic, like the bottom of a sharpie cap. If the blade gets hung up the chip is not gone.

When I first started to work at Work Sharp as our International Account Manager it felt like I was drinking sharpening information through a fire hose!!! I have spent a ton of time sharing and educating my friends and family about sharpening. Now seeing this knowledge and know-how get outside of our company walls via video is awesome! Thanks guys and keep it up.

Thank you Josh, Steve and crew . I purchased a Ken Onion system a couple of years ago from Northern tool . I've sharpened a few knives with it and have been very happy with the results . I can't thank you enough for this video series . The instruction manuals are great , but when you can watch a master craftsman share his knowledge and technique, it takes you to a new level. My wife says I have OCD , yes I have a drill Doctor . I'm starting to think she might be right .Nah!

Nice tips, nice video. Wish you guys had an overhead camera looking down directly over the Blade Grinder. That would give us a good view of how the blade is pivoted / manipulated during the grinding process.

I appreciate y'all putting out these videos. I purchased a Ken Onion series at Blade Show in 2018. I have to admit that I haven't dedicated the time to learn the machine, but you have inspired me to get it back out and learn how to properly use it. I have tried many different systems, after watching these videos, I feel more confident in using the Ken Onion. Thanks again!

As far as power units go WSKO cannot be beaten, fast and very efficient. So I rarely do manual sharpening other than stropping. I wish your videos were longer, 20-30 minutes and more if the subject warrants the attention. Better more consistant closeups. I know your under budget so kudos to what your doing and I do enjoy the moment. Can scissors be sharpened on the Blade Grinder? I always chicken out and use the built in sharpener on the WSKO. Thanks guys...

Thanks guys. How long do your average kitchen pull-through product last? This video was helpful, in the sense that two nicks on a knife are now less prominent, (so I’ve got the ‘grinding it down’ technique down!) but 3 hours later I can’t get an flippin’ edge back on it (using a whetstone). I then pulled out an ‘Accusharp’ pull-through thing that’s some years old to see if I’d have better luck with that- but no noticeable improvement (they say they restrict the edge to approx 21-degrees). The carving knife I am trying to shape seems to be a “Myland.” I read an article that seemed to say that all old knives were recoverable; nevertheless, I’m wondering if this is all my lack of technique? I can’t find what the knife is made of. Hence looking at your pull-through & various kitchen knife products, cause I’m out of time on the project today. Thx in advance for any advice.

Can I use the Onion alone to take out the material for chip removal? I don't have the blade grinder unit.

Great question, no it wont. We make a few tools that sharpen serrated blades, however we do not make tools for sharpening saw blades. That's a very different type of sharpening.

The concepts are all the same, just a slightly different form factor. I would recommend sharpening the full length of the blade for 5 strokes on one side, then 5 on the other to maintain symmetry. Repeat until the chip is gone. Remember to place the knife in the guide while the machine is off, then power on and begin pulling through immediately. Then stop power and lift the knife off when the tip is in the middle of the belt - this prevents tip rounding.
