How to Rehydrate Dried Chili Peppers

Тәжірибелік нұсқаулар және стиль

Here is a simple method for rehydrating dried chili peppers, which you can use in a multitude of recipes. I rehydrate peppers all the time for making sauces and hot sauces from scratch, but also for using in soups, stews, and many other meals. Great way to have them on hand to use anytime I need them. Dried peppers can be stored for years. This method works for any type of dried peppers.

    Never would have guessed you'd give them a quick roast first. So, I haven't grown any peppers before this year. All I grew were some superchili f1's. I left what I thought would be the last round of peppers for the winter on it, since the green and red was Christmasy. They dried on the plant, and to my surprise an explosion of blossoms and new pods started just before Christmas. No one praises the peppers themselves, but the plants are good to you. imgur.com/O9xZN96 That's what it looks like, and I didn't take good care of it.

    Thanks for the video. I'm planning to do rehydrate some ancho chillies for a chilli con carne. Why do you remove the seeds? Is there a reason I shouldn't add them to my dish?

  • @ChiliPepperMadness

    Thanks, Terry. You can leave in the seeds, though some people find them bitter. They can also affect the appearance and smoothness of your finished sauce, with the seeds floating around. It's more of a personal preference. Let me know how it goes for you.

    Thanks for the video. Just wondering if the water is useful for anything after rehydration. Is there any flavor?

  • @ChiliPepperMadness

    @ChiliPepperMadness

    5 жыл бұрын

    Actually, yes, the water will contain some of the nutrients from the dried peppers. I normally use some of that water with the rehydrated peppers to form chili pastes, which can either be turned into sauces or hot sauces, or added to dishes, like curries, soups and stews, for big flavor. Just toss the rehydrated pods into a food processor with other ingredients, like garlic, ginger, herbs, spices, and a bit of the reserved water. Process to form a paste, then use as desired. I hope this helps.

  • @ChiliPepperMadness

    @ChiliPepperMadness

    I do often, David, but not every year. It's smart to keep seeds that are harder to find. I have information on the site for this, on saving seeds to grow later. See: www.chilipeppermadness.com/cooking-with-chili-peppers/saving-chili-pepper-seeds-for-growing-later/

    So..will this work without scraping out the placenta and seeds...that placenta is essential imo when rehydrating and eating whole pods(as that is what I am planning on doing).So I guess I'm asking what is the best way to take whole,dried Carolina reapers (which is the pepper I will be rehydrating) and have it be as much like a fresh pod as possible???Thanks for any help guys!!!

  • @ChiliPepperMadness

    @ChiliPepperMadness

    Jeff, absolutely. I pretty much always keep them intact. I prefer more heat with mine. Some people don't like the seeds, as they can have a bitter flavor. The seeds pretty easily fall out after being dried. Let me know how it goes.

    @@ChiliPepperMadness thank you very much my friend and I'll sure give you an update on how the finished product turns out.I have only eaten fresh reaper pods in the past...but getting a large amount on the ol interwebs is kind of expensive so I'm looking to go a cheaper route whilst still being able to obtain a significant amount of peppers...and dehydrated is the best way for me to achieve that...lol...again thanks for your reply and I'll holler at ya in the next few days with hopefully a success story.Have a great day my friend!!!

  • @ChiliPepperMadness

    @ChiliPepperMadness

    Faisal, it is better to use seeds from fresh peppers. The seeds can be stunted from the drying process and aren't as productive.

    So my friend is supposed to eat a Carolina reaper since he lost our fantasy football league. I have them dried right now, would it be best to rehydrate them like this or eat them dry? To be fair I’m trying to make them as hot as possible as his punishment for losing

    Why don't you just leave them in water over night and then they would hydrate and you can use the water in the recipe so nothing is lost in terms of taste or heat?

  • @ChiliPepperMadness

    @ChiliPepperMadness

    You can certainly do that, yes. You can also use the soaking water - I do all the time - but many people find it bitter. Give it a go and adjust for future recipes. A lot of times I use some of the soaking liquid and add fresh water to taste and consistency. Let me know how it goes for you.
