How to Preserve Grape Leaves 4 Ways

Method#1 Boiling method-Cut steam and wash the leaves very well.-Try to stack the leaves on each other.-Bring water and salt (about 2-3 Tbsp.) to a boil in a medium pot over high heat.-Submerge a few leaves at the time in the boiling water for a few seconds and once the color change take them out and let them drain in a colander.-Keep some of the leaves for one meal in a zip lock bag then freeze them. Or you wrap each meal in a plastic wrap then put a few wrapped meals in a zip lock bag.Method#2 Drying in the sun method-Stack and fold a few leaves together and pass a thread through and make it like a form of a necklace.-Hang it outside in the back yard so they dry from the heat of the sun. Once they dry, keep them inside in the kitchen.-When it is time to use them, submerge them in hot water so they get soft and be able to make grape leaves rolls.Method#3 Freeze Them Fresh-Take a few washed and dried leaves and stack them on top of each other and then roll them in tightly like a burrito and wrap them tightly with plastic wrap. Keep the rolls inside a zip lock bag then in the freezer. Make sure not to put anything on top of the bag while it is in the freezer.Method#4 Canning Method- Stack and fold a few leaves together then press them in a clean jar until the whole jar is full. -Put a plastic round shape on top of the leaves so everything can be submerged by the water and not flouting.-Bring about 2-3 cups of water and 2 Tbsp. sea salt without iodine to a boil.-Pour boiling water on top of the leaves. Water should be over the leaves so if you run out the boiling water makes more.-Close the jar with the lid tightly.-Put the jar in boiling water for a few minutes, about 5-10 minutes then turn the heat off . Take the jar carefully out and flip them on a clean kitchen towel. let them cool completely then you can store them in cool places for a year or more.

    It’s important to gather young tender leaves. Harvest in mid spring, early summer. Otherwise the leaves can be tough and bitter.

    عاشت ايدج بس لو سمحتي هاي الي بالخيط تجفيف مو تيبس وتتكسر زين بعدين اشلون الطريقة نشتغل بيها

    تعلق بالخارج تحت الشمس حتى تجف ثم تدخل داخل البيت وتعلق في مكان بلرد وتنقع في الماء الساخن لبعض الوقت حتى تلين قبل الاستخدام وتستخدم للف ورق العنب بشكل عادي اهلا وسلا وشكرا لتعليقكم

    Thank you so much. No you don' need to cook them use them directly because they already washed. It is an amazing method and it will save you a lot of time.

    Thank you. I will try freezing fresh. Previously I froze them after bleaching them but they were crumbly and unusable.. My granny used to salt each of them and put them in glass jar with stone on top and cover and that was it. No water.

    Honestly these are from an old ready grape leaves jar from the store but you can use any small plate or and small weight. You may search them in the Amazon too.

    I grew up eating grape leave rolls and dolma and never eaten them in my salad. they are usually tough and chewy to be eaten and never heard anyone put them in salad. @@taniaortiz6555

    Vinegar is unnecessary, due too the high sodium content. Although, proper hot water bath processing is extremely important. Best regards.
