In this episode, Master Sushi Chef Hiroyuki Terada shows you how to prepare raw shrimp for nigiri sushi with some easy steps. You'll need some bamboo skewers and the length will depend on how large your shrimp will be. In our case, we use size 13-15 which means that there are approximately 13-15 pieces in a pound. The higher the number, the smaller the shrimp. This numeric notation is also used when classifying the size of scallops as well.
Besides using this shrimp for nigiri, you can also use it for rolls as well, which is what we do for our Monster Roll. That video will be following this one in 2 episodes.

About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZread.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

    Hiro you are the best teacher . Thank you for teaching me how to stretch shrimp, I save a lot of money doing it my self ,its just a little more work but a couple cold beers while doing the process makes it no problem.     Hiroyuki Terada - Diaries of a Master Sushi Chef yes, I had much fun doing them and my family loved everything I made. There is a saying in Spanish that says “ in the land of the blind, the cross-eyed is king” well, the tastes were there but my sushi and rolls may have had every sushi master rolling in their graves, lol!! But I loved working with these new ingredients as I mostly make Mexican food. Thanks again for your generosity.

    Wonderful ! And this is my favorite sea food - Shrimp. And i like right this - wild tiger shrimp, dont like actualy vannamei . But in Russia usually use 16/20 size. Its just cheaper. Tnx for a video)

    Hey Chef Hiro and Nove , I'm in Polk County, I've heard different chefs say that it's too time consuming and the price difference for ebi, cut ready to go is about the same. I believe the difference is in taste. I also use salt and lemon in the boiling water and soak them in ginger water for a few minutes.
