LOL. Thank you for your comment. I have been using a hem marker on cakes for 30 years. It seemed like such a great tool for quick and easy measurements on a cake.
i could watch your videos all day long! even though my cakes don't turn out as beautifully as yours do, i'm glad you're doing them!

This is easily done in a tired cake. Definitely pipe the rosettes after the cake is iced and stacked using dowels for support.

I have had problems with my icing, when I am piping the rosett it kind of breaks before I am done piping it, am I making my icing to hard or I mixed to little?? Oh and I love your detailed videos, I can sit here watching each and every one of them. Thank you!

might be putting too much pressure when piping. have same problem when writing. i would practice little make sure and just adjust pressure or maybe releasing pressure too soon.
Your recipe of Swiss buttercream icing is that enough for that design I will also make rosettes on top. I will make that kind of design for 2 layer 8".
