    As an autistic person, I need this kind of videos for EVERYTHING! Simple tasks such as ordering a coffee or buying can easily become difficult.     I'm madly in love with coffee. So, I added up what it would cost me in a lifetime worth of espresso drinks. I took that money and bought a genuine Italian made double boiler prosumer espresso machine and an equal quality grinder. I won't lie, it took me the better part of a year to almost equal that of a barista. If anyone ever tells you "making espresso is easy", they're pulling nearly undrinkable sink shots at best and they're lying to you. After two years, it's most definitely money well spent. Now, I can't wait to wake up every morning, pull a shot in my PJ's, sit back and sip on a little cup of heaven.

    I mostly drink coffee at home but my local specialty roaster has a café and the staff there has been great. When I asked them for a recommendation for something fruity they recommended one of their blends. I asked for a single shot so I could get a sense of the flavor and I don't think they charged me for that shot. I walked out with my beans and they make a lovely pour over as well as great espresso. My latest visit yielded a very tasty natural process coffee. I'll be going back for sure! Ceremony Coffee Roasters in Annapolis MD.

    That first shot they 'gave for free' has paid for its self after your first bag of coffee and the fact that you want to go back. I do this all the time with the batch filter in work, I will give a expresso cups worth for people to try and the will usually buy a batch and then some beans too Always go back to places that do stuff like this please

    My local roaster does this too. They're happy to make as many samples as you want. They look a bit put out when I just buy beans and refuse the brew.

    Fun video! Interesting about having an espresso paired with water by default, here in the UK even the good coffee shops don't tend to do this unless explicitly asked and I've always felt weird asking as I didn't realise it was a normal thing to request, so I shall feel slightly awkward asking for it no more! :D

    Pairing an espresso with a glass of water is pretty normal all over Europe, especially in the south. But the UK has a "unique" approach to food anyway.

    I read once when I was in Naples (Italy) that the side water is meant to be drunk before the espresso, as a palate cleanser, and that it was considered insulting to the barista to drink it afterwards as it indicated that you wanted to wash away the aftertaste of the coffee.

    Yesss. When I was growing up I felt like all the books we would read about Chinese Americans in school would mention the fact that everyone from China slurps their noodles to show appreciation for how good it is. It was a roundabout way to show pity to this whole oriental "barbaric" nature of a culture and to say that we shouldn't judge others. It was so ridiculous.

    I absolutely love Japanese local small roasters where you can get the best espresso of your choice, but what was making me happy is that even in something like Starbucks if I asked about the espresso menu, they'd tell all about it and give little one-sip samples for tasting of cold brews of the blends they would be using that day. So that you'd choose which one you'd like to go into your espresso drink 😃 This is smart

    My dear departed uncle was a self described coffee connoisseur. I remember when we would go for coffee he would ask the barista, the question, What is on Espresso today?. I never really understood why he asked and why it mattered. Thank you, Morgan for the explanation.

    It's strange to me how people outside my country are so easily intimidated by pure espresso while in the Czech republic a lot of people enjoy coffee with the literal grounds in the cup. I never even thought of it as strange until coffee started appearing on the internet. Before anyone starts calling us weirdos or whatever, it comes from the fact that during the rule of the soviet party, there were no such things as cafes, coffee machines or even coffee filters here. People made do with what they had. We only do it now because children saw their parents do it, which saw their parents do it, so it feels normal. And honestly it's a really easy way to have a quick and cheap coffee. Edit: the real weirdos use one batch of grounds twice. Usually poor uni students, for cafeine induced all nighters lol

    That's actually still kind of a thing in some places. We tend to call it "cowboy coffee" stateside. From what I've seen it also tends to be the kind of thing that people pick up from their grandparents. Either that, or people will do it while camping.

    That's a really popular way to drink coffee here in Indonesia, especially for the older generation. The younger ones do it too because it's cheaper and quicker but not all of us like to get the grounds in a sip 😆

    I really liked the video, this is super helpful for me as a person with social anxiety.. less things to mess up and more knowledge on what is "appropriate" espresso ordering behaviour lol. I love espresso but i was never sure i wasnt drinking it "wrong" somehow, so thank you for the easy and straight forward explanations, plus the view behind the counter!

    I had my first espresso drink (cafe mocha with very dark chocolate and little milk) around 1979 (four years before I first heard of Starbucks). My first double espresso a couple years later -- still years before you were born. I drank Americano every morning while attending community college (in the early '90s) for 8:00 AM class after working until midnight the night before. I got my own first espresso machine (a little up-flow boiler unit, like a self-heating moka pot) around 1987, sprayed milk all over my kitchen learning to steam foam for cappuccino, then moved up to down-flow with an actual portafilter, then pump-fed; at present, I don't have time for home espresso making, but have a Krups Gusto (my second) in waiting for when I have more time again. If I hit the lottery, there'll be a traditional lever-drive in my new, huge kitchen. In short, I've been at this a while, and this is one of the best explanations of what a beginner would need to know when ordering one that I've ever seen. It's also a clear reminder of the levels of skill and care that go into making good espresso in the absence of the fully automatic machines that grind, measure, tamp, pull, and dispose of the spent puck all at the press of a button, and steam milk at the press of a different button, as found in "fast food" espresso houses that need to deal with rapid employee turnover and high volume drive-through. Good for you!

    This is fascinating to watch as someone from Portugal, where coffee = espresso and literally everyone over the age of 15 will drink one during breakfast and after each meal. Since I started my coffee journey through "the American/Northern European path" aka: Starbucks, trendy brunch cafes and eventually specialty coffee shops, this feels like a bit of a clash of worlds

    I think you can learn a lot about a coffee shop by ordering their espresso. When I go to one for the first time, I order first an espresso and, if I feel like it, another one of their drinks.

    Yes very true Eduardo. I find you can tell an awful lot about a coffee shop by using their toilets. When I go to one for the first time I will just urinate and then, after that depending on how that goes, and if I feel the need I will defecate into a coffee cup (sometimes two cups are required for heavy soiling), then leave the soiled coffee cup back on a table in the coffee shop. Now if the discovery of said soiled cup sends the staff and then customers into a disgusted panic, you know the coffee shop is not up to muster. Now on the other hand, If the offending article is discovered and dispatched with minimal fuss you know you are in a quality establishment and you can rest assured the espresso will be of a suitably good standard.     As a person who's "self-taught" at drinking espresso, it's very weird to find out the spoon is for mixing the crema into the liquid espresso. One of the pleasures of espresso to me is the different experiences in the one little cup: you get the aroma, then the crema, the bulk of the coffee, and then the dottle-y bit at the bottom. It's like a little adventure!

    James Hoffmann has a different explanation of why you should stir the espresso. Basically from what I remember, the espresso that first enters the cup has a different taste than the last bit that enters at the end of the shot (i.e. the espresso gets more bitter tastes at the end of the shot). So you stir to get it all mixed together. I don't think it has anything to do with the crema.

    @@davidthomas8691 usually the espresso, in my experience, will be more acidic at the end, and slightly more bitter up front, because the bottom of the cup is the start of the extraction and the top is the last. First in, last out

    We have two kinds of coffee at home: a fruity, light coffee for my french press, and a dark chocolatey, sweet espresso. But the more I watch of your videos the more I realize I prepare the espresso in most layman of ways - espresso grounds by feel, no professional tamper etc. I LIKE that espresso though. On the other hand: I have never had an espresso prepared by a knowlegable barista. Perhaps it could taste even better.

    Your videos have already taught me so much about coffee, but there's something about this video especially that I liked! It could be a mix of the topic and the style. Anyway, my husband loves ordering straight espresso, but for some reason, we've never been bold enough to ask what the espresso is. And then we often end up blindly buying coffee beans from that store and blindly trying to recreate the coffee at home. Thank you for giving us a bit more confidence

    First time I entered a coffee shop I did not know what I was doing, I ordered something without knowing what it was. I was too intimidated to question it. I got that tiny glass of coffee and got really stressed wondering how fast I'm suppose to consume it. I am suppose to drink this fast? Or should I sip for hours? Hahaha. Now that I'm older and wiser, I laugh at myself realizing it would have been fine to ask some questions. Now watching that video, I'm still wondering what would have been the perfect drinking paste.

    It's funny because the entire point of coffee shops is for you to enjoy your coffee drinking experience. There's only one correct pace to drink a coffee, and that's however fast or slow you like it. Cheers

    People really overthink things. There are not that many rules about how to do things, and even less that are worth stressing about. I can only guess this is due to video titles and ads "10 things you're doing wrong!" "The right way to do xyz!" "5 things you should be doing differently!" When it really doesn't matter most of the time.

    Meu irmão em cristo, odeio concordar com você. Dia desses pedi um espresso curto no California Coffee e a menina falou pra eu escolher alguma coisa do cardápio. Não culpo a trabalhadora, porque mesmo vivendo num dos países que mais produz e exporta café no mundo, não exploramos (coletivamente mesmo) muito sobre os fazeres e saberes do café. Em contrapartida, no mesmo bairro tem uma cafeteria nesse pique aí da Morgan com uma galera no mesmo pique.

    I did a deep dive on the top 10 coffee shops in my local area last year to try their espressos. Not one of them ever offered me a glass of water and I have never seen one offered. Interesting how some things translate from region to region.

    Thank you so much for this video! I currently work at a place that mostly sells coffee beans and coffee tools. We also have coffee drinks from an automatic coffee machine, but the actual drinks sadly play last fiddle. "Why learn about coffee? The machine does it all for you!" Anyways!     As someone with food allergies I find ordering coffee very intimidating. It's not always up front what's in a drink and the last time I asked for an ingredient rundown, I got a 'are you serious?' dramatic eyeroll. I haven't stepped foot into a café since.

    I am sensitive to a lot of coffee and I get the same reaction when I ask questions. I want to enjoy what there is to offer, and unfortunately people assume it just being 'picky', when in fact I would rather have shakes from it being too strong/on an empty stomach for hours after and potential stomach pain ☹️

    As a Portuguese person I'm always surprised when people feel awkward about expresso, or find it too strong, or don't even know how to drink it. It's a traditional drink here, and I don't know anyone who won't have it. Cheers for my south European coffee drinkers! We even use the expression "tomamos café? (shall we have a coffee?)" as a synonym for taking a break outside the house to socialize. So when a friend from the USA came over about 15 years ago, and ordered a coffee only to then stare in horror as she was brought an expresso, I was confused. She thought it was very "chic" but at the same time she acted like it was hard liquor and she could not even drink it, first waiting for it too cool (blasphemy) and then wanting to fill it with water and sugar to make it into what we call "coffee water" (aka what you guys usually drink). It's an interesting cultural difference. And I find that expresso drinkers have a sort of kinship. I move around a lot, and it is ONE OF THE HARDEST things to find. Good expresso that is. I've had such bad luck in the UK, Germany and the Netherlands. I can only find drinkable expresso in foreign coffee shops, either from the south of Europe or the north of Africa. I'm really glad people have taken such an interest in coffee, and this way, perhaps I'll be able to find more expresso everywhere I go, and try different types. Still, there is a downside. Since it's a traditional drink in Portugal, it only costs around 50 cents. And this is the amazing, flavourful coffee we love and adore. Every time I find it outside of the South of Europe, it costs 3 euros or more! I feel robbed!

    Vocês costumam beber café sem açúcar? Aqui no Brasil é mais comum com açúcar. Mas ultimamente tem-se aumentado muito o conhecimento das pessoas que gostam sem e sempre beberam sem açúcar. Até me surpreendi pois não achava comum. Pra mim, que cresci bebendo café puro com açúcar é estranho beber sem haha Tem até briga de qual é o certo e melhor, mas é tudo na brincadeira.

    I do recall one of the first times having a more complicated coffee being a Turkish or Arabian Coffee in the Middle East. It feels quite a ritual to be followed and this clip reminded me of the uncertainty I felt going through the process surrounded by interested watchers.

    My first time ordering coffee (back in 2002 in Pasadena) I went into a Starbucks at midnight during dead week studying my first set of finals. I ordered a hot chocolate with a shot of espresso. The barista looked at me blankly “so a mocha?”.. um.. I guess? I had no idea what a mocha was. Adding espresso to hot chocolate? What a genius invention.

    More of these videos! I almost exclusively make my coffee at home because I don't like sugary drinks from chain places and my anxiety won't let me try new things at smaller shops. I went into a coffee shop once in the summer and asked for an iced coffee. The amount of options the barista gave me was just too much! I didn't know there were even different kinds (all I remember now is cold brew or americano).

    Great video! I'd love to see one that details what the responses to "What's on espresso?" actually mean in terms of how the coffee will taste. I wouldn't know what the difference between a Columbian water processed and grocery store Folgers should be, much less, single farm, naturally processed, Peruvian coffee vs. a locally roasted, honey processed, Tasmanian blend. What should I expect from these?

    Hello there Chris ! As someone who is learning about coffee such as myself, I too struggled with that in the earlier phase of recognising coffee. Here's a little tip to help you out! Referring to the video by Morgan, she is simplifying the complex characters of espresso to a first-timer customer, with terms such as (fruity, nutty, chocolate) etc. which I'm sure you are already familiar with. The variables that you mentioned such as - region - process method - roast level are information about the coffee which will be then be brewed and served to you by the barista. These detailed information my friend, is not up to the barista, but up to you're knowledge and understanding to "expect" the flavours of espresso. For example, Comparing natural and washed process coffee beans. Natural gives more complexed flavour; Washed gives more simplicity and clarity. Regions of the coffee make them unique in their own way because of harvested altitude and location gives character. (Fruity, Floral , Nutty, Chocolate ) Roast Level usually will be differentiated by Arabica / Robusta depending on region as well. To cut this shorter, familiarise yourself with every type of coffee out there! The barista serving you can do only so much of explaining for you, but at the end of the day, it's you who's enjoying that cuppa coffee!

    I find having fat in coffee/espresso helps with any sensitivity I feel so Idk if I will be able to enjoy a straight espresso, but these videos are so satisfying and I love learning about this stuff. Lattes all the way for me :) Your intro is totally me when I think about opening a meeting at work LOL. Chaotic attempts at engagement 👌🏻

    Very informative video!! I’ve been a barista for little over two years now,, and shock horror, I don’t like coffee. I really love making and preparing it, however I don’t enjoy the taste of espresso very much so I’ll usually only order a mocha or chai latte (maybe a vanilla latte or dirty chai if I’m feeling dangerous). That also being said, people ordering straight espresso in my country is rather uncommon, and is referred to as a short black, and for that reason I don’t have much experience in preparing espresso on its own for customers. This video is really informative and something I’ll definitely keep in mind for the next time someone orders!!

    Eheh, this brings back memories. At the coffee chain where I used to work at, all new baristas have to undergo this rite of initiation, of drinking a single espresso. Just a fun way to get to know the new guy. This was supposed to be a jab at the newbie, since many of them don't actually enjoy coffee drinks as much, especially not the dreaded 'superly bitter coffee that will make you stay awake for days'. Some even nursed their drink within the course of their first shift, but no one has failed to finish theirs so far. I remember the look on my manager's face as I took my initiation espresso in like 3 sips, because I wanted to get started with work. Still, even then, from that shot, I knew the coffee chain has some relatively good coffee for a coffee chain, and I'm gonna enjoy my time here, which I did

    I mean very very watered down coffee is sort of a thing. We call that "grandma coffe" or "flower coffee" here. Granted I've only ever seen one person make it with sparkling water (and that was by mistake) but some people like sort of coffee flavoured water.

    Go to most places in Adelaide, Melbourne or Sydney (just to name a few) that aren't a chain (and a few that are) and order an espresso, and they will know exactly what you want. The Italian influence has been strong enough everywhere that the meaning is clear. Occasionally in Canada, I have had to specify explicitly that I want the concentrated shot in the teeny, tiny cup.

    I went from 8+ teaspoons of sugar and full fat milk in my coffee to enjoying espresso as is. I do love that first sip thats just all creme though 👀 My dad thinks I'm drinking it wrong by not adding sugar at all 🙃
