How To Make Trini Chadon Beni Sauce | Foodie Nation

One of many essential Trinbagonian condiments, Chadon Beni Sauce is a definite crowd-pleaser served atop fried fish, doubles, barbecue and more:
Yield: 10 Oz
INGREDIENTS
2 ½ Cups of Fresh Chadon Beni (Culantro) Leaves
4 Cloves Garlic, cut into Slivers
½ Scotch Bonet Pepper, Seeds Removed
2 Tbsp Lime Juice
1 Cup Water
1 Tsp Salt
METHOD
1. Prepare chadon beni leaves by washing off any minimal dirt and cutting off the root end.
2. Cut leaves into two or three pieces and place into a high powered blender together with the sliced garlic, scotch bonnet pepper, lime juice half the amount of water and the salt.
3. Blend on highest speed until ingredients are broken down into smaller chards. Add additional water to break down the viscosity of the sauce and assist in blending. The consistency should be fluid with small coarse pieces of chadon beni studding the sauce.
4. Taste sauce and adjust with more salt if needed to help accentuate the sharpness and savory notes.

    i made this in Jan '21, used a little bit of it and kept the rest of it in the fridge and forgot about it; 5-6 months later, i took it out and tasted it, it tasted much better! i think time and fermentation sorta mellows it out, and now i can't get enough of it! will have to make some more now...

    @foodienation I never knew how easy it is to make these sauces. WOW! And with all the recipes you have showed I can do a little home sweet home here in Maryland and invite friends and family over to enjoy.     I used vinegar instead of lime and added sugar instead of salt . I froze the sauce and use it whenever . I love it !

    I'm gonna give this a try in my food processor and substitute the water for a bit of olive oil. This sauce with the tamarind sauce and some tarta sauce would be nice on fry fish and chips. Thanks for sharing👍

    In Puerto Rico we call it recao and its used in the green seasoning and soups...The use of chadon beni in PR makes the difference between cooking in the DR and Cuba.

    Trinbagonians are people of Trinidad/Tobago it isn't really that funny? Some people refer to themselves as Trinidadian, other tobagonian, while some refer to themselves as trinbagonian (a mix of the two words pretty much) because they are a native of trinidad and Tobago. Like I said its not really funny thats like someone laughing at you calling yourselves British because you are from London? Again not that funny but hope this helps you understand what they said and why they said it
