    I was thinking, the half dome is cool, but if you use a garlic press and shaved ice you can make 'perfectly unclear' ice to contrast with your perfectly clear ice. I'd really like to see you do that actually

    Pretty much the setup I use for ice - guests love the big clear cubes. Especially when you add a little something interesting to the middle of the cube.

    Thanks for the video. I mess around a lot with ice and that mold is one of the easiest I've used. Very easy to get the ice out of the mold and makes great, square, clear cubes.

    I love to hand cut it too. But now I actually lack space for bigger cooler in my freezer so this option is the best for me. But I miss making large hand cut ice sphere!

    I just have to say you blew my mind on 2 different subject matters. I have made clear ice before but I have never use the plastic template on top of my cooler. I am mind blown. The second tip was the old fashion mixed with rum.     Boiling the water prefreezing also helps expel oxygen in solution. Awesome techniques btw!

    it does enhance the mineral concentration though. you have the feeling it helps because it freezes slower but if you adjust your freezer temperature, you shouldn't have to waste your time with that step.

    Really like that dICE mould, and of course they're sold out. I've been making ice in a camping cooler, and it works, but it is a bit of work hacking or sawing out the cubes. Great content, I like your passion for making great cocktails and ice :)

    Thanks for the great video for a thorough explanation. How do you store the cubes once extracted? I have several sealed containers in our freezer for the clear(rustic cut 😉) and the fog ice. After making 2-3 batches it last me several weeks/month. Like making the long columns for nice G&Ts really wows the guests.

    Another great video. I always liked the idea of stamped ice but I was thinking you need to warm the stamp (since some people use a torch to heat it). It is great that it works just by applying some pressure. Cheers and have a great weekend!

    Thanks again my friend! If you make several in a row you will have to heat it eventually because the metal will be cold but as long as it's warmer than ice, it works.

    Of course! But in a close container if you don’t want the ice to taste like what you have in your freezer. And when you store them, if they are wet, they will stick together afterwards. It’s not a big deal since they will be easy to separate. You can avoid that by drying the cube with a cloth before putting them back in the freezer.

    This is nice if you really want to impress. I'm not sure I like my friends enough to spend > $500 on ice presentation but if you have the money, go for it. The $10 igloo works great for for clear ice but the shapes will be random.

    Unfortunately, this was custom made. I bought a japanese barspoon with an interchangeable piece at the tip of it. Then I sent it to someone who make icestamp in Europe and he made the custom tip with an ice stamp that fit the barspoon. I can't get a hold on him anymore. Keep in mind, this was a 400$ project.     First of all, great video. Perfect camera work and perfect barteding&ice making skills. I got a question, what do you call the old-fashioned you made in the video?     Oh no! Really? Well I wintersmiths make some very good quality molds but they don't yield as many cubes. Look at @vladslickbartender 's latest ice video. kzread.info/dash/bejne/f3thybuGoNWtk7Q.html The mold he uses makes 4 cubes. It looks pretty legit. Tell him I sent you there ;)

    That's the beauty with the dICE mold. It's no bigger than 2 regular size topperware container and it if you lack patience, just do the clear ice thing. Don'T wait for the scrap ice to form. That way, the mold does the whole work for you. No cutting required ;)

    Oh man this is a fantastic video! When I saw your other dICE video I loved it and got me an unit (which I loved) but I thought I was doing something wrong because my ice wasn’t 100% transparent, but like 90% instead. Now I see that it is apparently normal, glad to know is not my fault. Also I love your bar spoon with ice stamp, damn how I would love something like that, do you know if there’s a way to get one of those online? I know you said is custom made but hey I had to ask 😅! Thanks again for this amazing video!

    You can fine tune your technique with dICE by adjusting the temperature of your freezer, breaking the bubbles in the water tank before placing it in the freezer, things like that but for home purposes, I think the result is perfectly fine with its little imprefections. For the barspoon, its a guy in Europe that hangs out with Eddis from @cocktails_for_you who made it for me. It was the one and only he ever made. He makes ice stamp (or used to make, I don't know if he's still operating) and I asked him if he could make something very special... he said yes. He bought a barspoon online. The tip was interchangeable so it had a screw at the end. So he engeneered pieces that fit that screw and made an ice stamp that fitted. Was pretty complicated but was worth it. With that video, I realize I should ask him if he still makes them... I'm sure he would sell some because I got a lot of questions aboutit.

    Hi. Thank for the info. Now I can make clear ice for my bar. But, my small cooler box got crack after 1 month of use. (Crack always at the bottom inside) This is my 4th cooler box. I used 3 different brand of coolerbox already. What am I doing wrong? How to not crack the ice box? Thnk you

    Great channel, I also follow you on Instagram, I came across your YT thanks to Steve the Bartender :) Just made some grenadine and trying out your 5 recipes for the classics that contain grenadine... Anyway, I have 2 dIce molds, small and large cubes, plus a few different setups for directional freezing, they all did a great job at my old location. Ever since I moved to a new house, not anymore... Crap ice starts already in the 'cubed' part of the mold. I've been told we had bad water at the new location, I am using a water softener here, have tried mineral water, boiled water... I have also put extra insulation on all but the top side of the mold, nothing has worked. My freezer is set to -18 C, could that be the problem? Thank you in advance for your and anyone else's comment!

    Thanks for following us on both plateforms :) Your problem sounds to me like it's due to the "hard' water you may have. Meaning that your water has a lot of minerals and it makes for a lot of impurities when it freezes. But the fact your freezer is at -18 may affect that as well. If it freezes fast, the air bubbles and sediments don't have the time to escape the process. I would recommend to try with filtered water from the market and lower your freezer to maybe -14. Let me know how it turns our. Cheers!

Was really excited to find a clear ice mold with reliable distribution in Europe, but I guess we've got a bit to wait. Here's hoping they are just having trouble as a result of the pandemic.

    Boiling water will help removing some of the oxygen in it but you enhance the concentration in minerals so no, it doesn't help much. Don't waste your time.

    It was customly made by a friend. He ordered a Japanese barspoon with interchangeable tips and he made the stamp that fitted the screw at the end of the spoon. It cost me 400$ lol

I live with my family of 4 and unfortunately I don’t have the freezer space for a big cooler and if I’m being honest, cutting my own ice probably isn’t the best idea cause I’m so clumsy😂.     I reached out to them and unfortunately, their facilities including all their stock and tools burned down a couple months back. They are in the process of setting everything back up, but it could be a while before they are fully operational again.

    If the scrap ice has all the impurities from the water aren’t you adding concentrated impurities to your cocktail by using it to mix or shake?

    Unless your using water from a lake, only impurities you will have at the bottom of your frozen tank will be air pockets so it will melt faster butu it won't affect the quality of your drink if you can control your dillution. Cheers!

    Just so everyone knows.. their is a machine that makes clear ice cubes. Luma Comfort Portable Clear Ice Maker While it wont do LARGE ice so you can make balls.. it will do standard clear ice if thats all you want. They sell it on amazon.

    Yeah well water can contain 0.01% of oxygen dissolved but with tap systems, that are under lots of air pressure, the air content can be way higher. It is not dissolved oxygen but trapped oxygen. The reason why, if you leave a glass of water sitting on the counter, it will have a lot of little bubbles after a while. So that trapped air, if you leave your water sitting on the counter, will loose some of it which will result in a clearer ice.

    Your suggestions for getting the oxygen out of water will be ineffective. If you want to get the oxygen out you could boil the water and let it cool or use a 'vacuuvin' type device for putting the water under vacuum and Degas it that way. Leaving it on the counter or stirring it will not do anything to Degas it.
