I researched to death the perfect non dry turkey burger today. I utilized a few different ingredients from some suggestions on other videos and then I cooked the burgers exactly how you suggested. Cold pan with oil and let the burgers begin to sizzle before covering. They were amazing!!!! The juiciest burgers I have ever had. I mixed 93% 7% Turkey with salt, pepper, minced onion flakes, and fresh minced garlic. Added Cajun seasoning, Worcestershire sauce, parsley and two Tablespoons of mayonnaise. Mixed gently and then formed into four patties. Placed on parchment paper and refrigerated for one hour. Absolutely spectacular. The last minute I added a slice of pepper jack to each. Thank you for your cooking suggestion!

I made these tonight for dinner and they were so flavorful and moist! My turkey burgers always come out dry and really boring. This is a keeper. 😋😋😋
My turkey burgers have never been dry. I make mines homemade and I add worchestershire sauce, soy sauce, and my secret ingredients a pack of lipton onion soup mix that I mix in a half cup of warm water and I add 4 tablespoons of melter butter. I've never added baking soda, bread crumbs or gelatin. Good looking burger though and I love the avocado slices added to them. Maybe I'll make some turkey burgers ths week. Thanks Bridget and Becky for sharing your recipe

Hi imari! You know Lipton Onion Soup Mix is good, but their onion and mushroom soup mix is "da bomb"! I routinely add 1 entire package of the stuff to 1 lb of ground turkey. Take note, however, that this Lipton product is addicting, and you will never cook ground turkey, chicken or beef without it again! Trust me! But, low salt or similar friends need to be concerned, because this stuff is not only good, it is salty! Happy cooking, everybody! Please get vaccinated!

I've made burgers plenty of times using onion soup mix. Lipton rightly calls them onion burgers in their recipe because onion is the predominant flavor. They're good, but this recipe is much better in my opinion because there is not one flavor or ingredient that overpowers or stands out. They've captured the perfect balance of savory flavor. What I love about ATK is they don't just arbitrarily recommend an ingredient or technique; they are literally a test kitchen, so that's all they do is keep trying and tweaking recipes until they find a perfect balance of flavor. And I love that they explain why they've developed a recipe a certain way. But I do understand that many cooks prefer to cook the same way they've always cooked because that's just the way they've always done it.
Wow! Amazing. We watched, We cooked, We ate! So delicious! That being said, as WW members counting points, we did “skinny” the recipe just a tad by using a lite butter and reduced the parm to only 1 T. We were able to drop 2 points per burger. Plus no bun - used one toasted Ezekiel bread slice and ate open faced. And no cheese. Still so yummy!
I can't believe this is not in this thread already: "In the world of burgers, that's like a centerfold." Great Line!
Saw this in cooks several years ago and hadn’t tried until today. Made it with no modifications to ingredients but I cooked in a tin lined copper sauté pan as I don’t have a non stick big enough. I found cooking times needed to be a little higher using “medium” but checked with my instant read. Brilliant. Juicy, flavorful, and taste more like turkey than any turkey burger I have ever had. They don’t need onion or garlic. Let them shine with just the soy sauce and Parmesa.
Great recipe, thank you!
These were excellent!
I look forward to cooking this!
This will make it taste amazing, but the easiest hack is chopping mushrooms and mix it with the turkey. the mushrooms melt ( not sure how to describe) and it makes the turkey moist without changing the taste

These are the best turkey burgers I've ever tasted in my life. Texture is perfect. We had to add about an additional 1/2c of bread crumbs to get them to hold up (this was 3 pounds of turkey). I never would have thought to start the burgers in a cold pan.
Thank-you! Now I am the burger Czar with this addition! My friends went nuts for my new exotic meat burgers!

My husband absolutely loves these burgers. I make them exactly as the recipe is written. He does prefer them cooked on the grill than in a skillet.

I made my first batch and came out as advertised! Not dry and very juicy. This can make a nice base to make turkey sausage with the right spices. This will be a staple.
AmaZing Ladies👏
Beautiful. I like the fact that they are not dry. Thank you.
That “Hi” at the start cracked me up 😂 I’d love to see a video focusing on condiments like the pickled avocado!
The only turkey burger recipe I have ever tried from you guys it's found on your site, and has a lot of Panko bread crumbs, and a fair amount of Monterey Jack cheese. But this is a very different recipe, and I'm anxious to try it today. Should be interesting to compare.
I made these for an elderly friend so they'd have some pre-made meals; after I tasted one, I had to make another batch for myself and my cousin. He said what I was already thinking: I may never eat a regular beef burger again! Just made them again tonight for dinner, but we just had them with juicy slices of tomato. They're so delicious and savory that they don't need the extra fat of cheese or avocado in my opinion. And they DEFINITELY don't need any condiments.
This is the only turkey I make now. Genius.
I love turkey, and the way you prepared the meat was mouth watering. I will definitely be making my burger this way soon. Thanks for testing foods new ways. You guys are doing an awesome job bringing new content.
@4:35 - "YES"!!!
The very reason that all new meat products you see in the grocery meat section - with lesser meat products (i.e. fowl and pork taking over from high quality beef) ... with (dry) chicken, chicken-turkey, or turkey - and add in delicious (moist) pork and oily lard. Same for the new mixes of some of the old non-desired (dry and hard) (round, skirt, brisket) beef sections and (soft) pork ... with added beef tallow or pork lard ... makes them desirable, edible, and juicy. The use of bread filling or stuffing is used as a binder (and a sponge !) inside the burger, but the bread sucks up anything over-juicy water and oils in the fowl-pork mix (or the beef-pork mix) and binds them all together with its gluten gluey gooey content.
I have to make turkey burgers all the time, fam won't eat red meat 😫. I use 85/15 or 90/10 through some spices in. Then put some butter or olive oil in a cold skillet throw the burgers in wait until juices run clear, about 7-13 min. depends on thickness and heat. Juicy browned turkey burgers and no complaints from my weird fam. I sneak off to five guys nomnom.

The recipe is good; I now Have to put in gelatine! Here in England, they put their fingers on the scales by adding too much liquid! If nothing else it will hydrate the gelatine and I might now, with the addition - of a little more - baking soda, get something that came off the bones. Thanks for this recipe, it will be a welcome change for me. Our house doesn’t do turkey at Christmas, so it can be my own meals.
“Is that a fried turkey leg inside a grilled hamburger? If so, yes. Delicious”
Thanks! I like different burgers; especially, when different types of ground proteins are reduced for quick sale. I've made pork and veal burgers, too.
I've never had a bad or dry turkey burger but then again I've always made them homemade. I've also never used the baking soda or gelatin or even eggs because I'm allergic to egg whites. The only thing I've ever noticed is that it doesn't feel heavy in my stomach after I've finished eating and I've never regretted making a turkey burger. I think the main point is to not overcook it and use good fresh toppings. If you want to be health conscious skip the cheese and mayonnaise and use lettuce tomato onions I would always trade LTM over Mayo or cheese for flavor.
Anyone try this recipe on the grill? Any modifications for grilling?
I wonder if I could sub ground chicken?
If this video was made by a lot of other cooking shows, I'd be hesitant, but how many ATK recipes I've made that were amazing... I might have to try this
I tried this but my wife was told by her oncologist to never eat soy so I used coconut amino instead- perfect! Thank you.

The way Bridget walked into frame and said “hi”… she is so campy.
Another way to guarantee a juicy turkey burger is to not cook it to 160 degrees. You achieve the same food safety result (7-log^10 lethality) by cooking the product to 135° and holding it there for 37 minutes. Sous vide machines are cheap and do wonders for poultry

I just learned about this from watching Asain cooks. Baking soda coats the lean meat, so it acts like a barrier to keeping moisture inside. If you've eaten Chinese food, you'll notice how tender the small chunks of beef or chicken are in their fried rice. I don't know if it's used on fatty meat. Probably, not.

This is not ATK's only turkey burger recipe - they have a few. Becky also presented one in 2013 that started with grinding your own turkey thighs. Those burgers could go on the grill and contained mushrooms instead of panko and parmesan cheese. 2013 Becky also mentioned that store-bought ground turkey was "too chalky". BTW this recipe was developed by Cook's Illustrated Senior Editor Annie Petito and the older one for the grill may have been the work of Dan Souza.

Not everyone wants a beef burger and for the purposes of food safety, turkey burgers need to be full cooked all the way through which requires some additions to the meat so they won't dry out as they cook. Some people also feel ground beef should be fully cooked as well and recipes for well-done beef burgers can have similar additions to that meat for the same reasons.
