I love small batch cooking! I can't handle family sized meals when there is just the two of us and don't like leftovers in most meals (except for homemade vegetable soup and chili!). I don't like to waste food but this recipe, I'm going to try it! Thanks for downsizing meal portions to two or three people!

Hi Leigh Anne - Hubby and I went on a little picnic yesterday and so the night before I made this delicious Texas Sheet Cake for Two as our dessert! We also had fried chicken, veggie sticks and potato salad. He drank beer; I had water. WOW is this cake delicious - the frosting was wonderful. I cut it in six pieces and took four pieces on our picnic. It transported well wrapped in foil. We ate all four pieces and was glad there were two pieces waiting for us when we got back home! Thanks again for a really great recipe for two.

You COULD freeze any extras. Mmmm..good.

Thanks for the great recipe! I used an 8 X 8 inch pan and it worked fine. (Your pan is 9 X 7, which in area is 63 sq. inches, and an 8 X 8 inch pan is 64 sq. inches - so they are very similar in size.)

Excuse my math geek out: Area of a circle is pi x r squared. In this case, r=4, so: 3.1416 x 4 x 4 = 50.2656 So your round cake would be 78 % the surface area of the rectangular pan. (About 3/4). So it would be smaller and taller. Hope this helps.👍💕

A 9 inch round pan is 63.5 square inches and would work well too. This recipe looks delicious 😊

I got the recipe for this cake from a coworker many years ago (I’m guessing 35-40 years) but it was for the full sized cake. In the years that followed as I moved to different jobs my coworkers loved it when I brought this in for all to share. Now that I’m retired and widowed I’m thrilled to see that you broke the recipe down to a small batch. I can’t wait to try it for the first time in probably 10 years. Thank you so much.

I found you this morning (5-1-2023) I am very familiar with this cake! I have been making it for 50 years! BUT!! It was not introduced to me as that! It was The Jenny May Cake! I am not sure who Jenny May was! But I received it hand written by an older friend as The Jenny May Cake! Over time I guess no one knew Jenny May! So the name got changed to what it is now! It is absolutely delicious! Even without vanilla! It is good without frosting too!

Me too. Texas Sheet Cake is supposed to have pecans in the frosting.

I've made this three times in the last month. It's a great recipe. I don't have buttermilk in the house so I use half and half. I also add one teaspoon of ground cinnamon to the batter. We're empty nesters so this is a perfect size.

I love this version of sheet cake. Too many times, people think that you have to get a load of batter and make a tall, bready cake layer. The thinner cake layer (like in this video) is the best version

My recipe has instant coffee in it.

This cake brings back very fond memories for me, from the 1960s and 1970s when my Mom, aunts and grandmothers made this at parties like Mother's Day meals and get-togethers!

Thanks Leigh Ann for a great and simple recipe. My family of three often cannot finish most desert recipes so I half the recipes but even then, we cannot finish. This one was delicious and we consumed 70% of it. 3 more slices saved for tomorrow. I didn’t have buttermilk but used regular milk mixed with creme fraiche. Also added a handful of chocolate chips into the frosting to make it more milky. Love your channel!

My mother still has the cutout from when the recipe appeared in the local newspaper back in the 1960's. We've been making it ever since. It always had chopped walnuts (or pecans) in the frosting. I think all 9 of us "kids" would ask for it on our birthdays haha.

I was taught to omit vanilla when using chocolate or cocoa powder. To enhance the flavour of chocolate add coffee dissolved in a little warm water. Vanilla is to be used to flavour anything other than chocolate.

Both coffee and vanilla can bring out flavors in the coco, it’s common for these ingredients to be used together. Like a black and white mocha or coffee ice cream.

Butter and cream makes such a melt in your mouth cake! Love it! 2023😍

I had never heard of the Tx sheet cake till a coworkers made one for work! OMG this cake is a true chocolate lovers dream. I have never tasted anything as good as this cake I was sold, no other cake will satisfy me. The daughter refused to share the recipe with us and I haven’t found what I think the recipe is till now you are spot on! Thank you for sharia video and the two recipe s! I just made this around 4:00 O’Clock in the morning. The recipe was very easy to follow along. I was surprised I even had everything in my kitchen. I’m not a chocolate eater, but I wanted to try this one out just for fun. It was soft and moist but I really didn’t care for the frosting. Maybe because I’m not a frosting person. But I will try to make this again down the rd for my grand babies. Thank again for this simple recipe.

i must say this was Amazing. I didnt believe something from scratch could taste better than a box mix of brownies with icing. it was So easy! and will be my go to FIRST! perfect for my single life, quanity is perfect. I used A higher quality cocoa baking powder, not sure if that made a difference BUT THIS WAS GOOOOD!

Cake looks delicious ! I have an easier frosting that takes less time. Melt one package of Chocolate Chips in the microwave for 1 5 minutes, spread on hot cake or brownies. Cut into serving size pieces when frosting has set up.

I'm so glad I found your channel, it's so hard to find small portion recipes for baking. I'm a widow and when I feel for something sweet and delish, I usually buy a slice of cake from the store, which gets expensive and I used to love to bake. Any and all small portion recipes are appreciated. I haven't checked out your videos (yet) but do you do small portion cooking recipes as well? You might want to set up a channel specific to that so that people can search and easily find a channel set up specifically for those of us who aren't cooking or baking for families or (armies).

I'm glad that your channel came up in Uribe!!!! The cake was delicious and it freezes well ! I'm baking for one but the left overs didn't stay in the freezer long :) At the moment I'm waiting for your recipe for lemon bars to cool so that I can have a taste !!!
