Teriyaki sauce is famous the world over. On fish, on meat, on anything! I'll show you how to make this super-popular and super-delicious sauce by yourself!
I used sugar in my recipe, but you can leave it out if you want! Once you've made this sauce, check out Jen's channel -- she'll teach you how to use it to make Bacon-Wrapped Teriyaki Hot Dogs!

    1:1 ratio for ingredients. Soy sauce Mirin Cooking sake Sugar Optional: small amount of potato/corn starch/flour dissiolved in water and added to thicken sauce Heat until desired thickness Use less sugar for less sweetness

    Thank you for the recipe. I made it yesterday and followed the full amount of equal parts. It was too sweet, maybe because my mirin is sweeter than the one you used and I only have turninado sugar at home. I think next time, I will go with half the sugar.

    Any kind of Japanese sake would work for this recipe! It is OK to exclude Sake, but the taste would be different...

    Hi Ai!. Do you have a Sweet & Spicy sauce recipe? Like the one used for sweet & spicy Tebasaki or Karaage, and also with Big red-pepper chili flakes? Would this Teriyaki recipe be similar (1 part each - soy, mirin, sake, sugar), and then maybe just add red pepper flakes? If yes, how much red pepper flakes?

    You can adapt this basic sauce to your preferences. I add garlic, ginger, and sometimes that garlic chili sauce. (the one in the little jar with the green lid) Then strain.

    Will the sauce thicken up without corn starch? Every time I make it with corn starch it almost has a powdery, non smooth taste to it.

    Hello Eric! Yes, it would last for quite long! I would say it would last for at least 10days! Could be much longer as they are all ingredients mixed, heated and has sugar in it.

    I've watched several chefs make teriyaki sauce & most say it will last in fridge 2-3 weeks. If you are concerned make a small batch & use it up within a week. I don't see why it couldn't be frozen, as well. (Don't quote me on that tho.) Freeze my Char Siu sauce with no problem at all. I use it within 3-6 months because I'm always making Char Siu.

    Cooking with Ai I just made this to go over some chicken. I added alittle more brown sugar because this is one dish I like really sweet. Then I had some steamed veggies(cabbage broccoli and carrot) and some rice. It was a hit with the family so thank you very much.

    I was wondering what the difference between shogayaki and teriyaki was. I guess it's just the ginger. Have you tried using corn starch rather than katakuriko? I've also been wondering if the different types of starches perform differently.

    joegt123 Well,we use the combination of soy sauce, sake and mirin for most of Japanese dishes. The difference between Shogayaki and teriyaki… is, I don't use sugar and katakuriko(potato starch) for Shogayaki, . So, the effect of the taste would be really different. Have you tried it?     Cooking with Ai I'm actually going to make shogayaki soon (today probably) That's how I found this vid/channel. I've been looking up just about every video on it, and subsequently teriyaki, to get an idea of what to do. Then I started seeing people use ginger in teriyaki and got confused. So I stumbled onto this one. If nothing else, this seems really authentic, as opposed to a lot of other chefs who take liberties with the recipe. I don't think we have potato starch here in the states (unless you feel like extracting it when you make potatoes...) So I was mostly iust wondering if the corn starch we have readily available was as functional as potato. Different types of flour work differently, so I thought the starch migt as well.

    joegt123 Oh! I see. I go you! and Thank YOU so much for stopping by our channel!!!! OK, well, I think most of the people outside of Japan who makes Shogayaki, they use Teriyaki sauce for any kind of Japanese foods as they might think Teriyaki sauce is such a popular one to use. But, as you could see my recipe video of Shogayaki, that is common one in Japan. I think it's OK to make it in anyways you like! If you want to try the traditional Japanese Shogayaki, please give a try my recipe! In that case, you don't need starch. Otherwise, yes, you can use corn starch for making Teriyaki sauce. But as I said, once it gets thick, the texture wouldn't change when the temperature gets low, so it would be nice to be careful when you add corn starch to the sauce for not to get too thick.     Is this essentially the same as "tare"? What if you add chicken meat and/or bones to it and then simmer it for a few hours? I made it once like that from a chicken tare recipe (for ramen). It was a sauce recipe...but the leftover chicken to make the sauce was darn good too.

    Cooking with Ai Yes, you're right, it had no sugar from what I remember (made it years ago, I forget exactly). I remember the recipe used a ton of soy, mirin, sake and simmer (pre-roasted/browned) chicken thighs/legs for a while. I lost that recipe tho lol :( Ah, makes sense (since I sometimes taste anchovy/iriko/bonito in broths at some ramen shops). Thanks for the tips. I'll research it more.

    You dont need potato starch - just let it boil in, it will thicken just right - but be sure to stir it all at long.

    +Summer Heartss We usually say you can use sugar instead of sake as it works the similar way, but it already has sugar as an ingredient. So, you may be able to try without them. It won't be the same taste of what I show obviously, but you could still make it. Or If you can really boil sake, the alcohol will burn off, so maybe you could use that too. I hope this will help you a bit...

    The alcohol burns off when the sauce boils. But I've heard there are non-alcoholic wines. Google it.

    Hi,I'm japanese dad who loves cooking. Actually,including alcohol component disappears when it's boiled. But if you don't want to use sake or mirin,I recommend to use shiro‐dashi.It's better to Umami. I'm sorry if shiro‐dashi isn't sealed in Maleysia.(We usually can buy at supermarket,combini in Japan) We often use shiro‐dashi for Misosoup,Nimono,Nabe,Takikomi‐gohan,or many Japanese cooking.     I am not 'Ai,' But perhaps I can help you with your dilemma. First of all; Considering the fact that you may not consume alcohol because of your Faith, which I highly respect, this recipe may not be good for you at all. Two of the main ingredients are or contain alcohol. Sake; commonly referred to as a rice wine, is not a wine. In fact, Sake or Saki in japan, where I lived and was stationed as a United States Marine is considered to be more of a beer because of the fermentation process. To answer your second question; Mirin is a condiment used in Japanese cuisine, and is considered a type of rice wine, because of its alcohol content. However the alcohol volume is considerably lower, it does contain high quantities of sugar. The alcohol volume can drop to 1% which will more than likely be boiled out, but for your purpose and beliefs, It still contains 'ALCOHOL.' There are NO Substitutes for either of these. The only substitutes are other forms of alcohol based products, such as cooking sherry, or other cooking wines. I hope that I have been of some help.     Miri is a kind of sake, just use a real dry white vine with a tea spoone of sugar about one quarter the cost of sake/miri

    I want a wife like her. Yes please. And please wear your cultural attire. Ignore the lame Western culture. It is pretty lame anyway. Stick to your traditions - so much more authentic and better. Ditch the terrible background music. This would go so much better with traditional Japanese music.
