    I'm from Honduras, and they're quite common in my town. My mom and I used to buy them from a little boy who sells fruit to earn money (Sad reality where I live). It's even sadder that we had to stop buying and eating the fruit because we learned it might not be safe for people with higher risk of having kidney disease. (We're both hypertensive) 😔

    Hi Avery, I made this jam again with a few changes I replaced the pectin with 3 tablespoons of lemon juice and I used a stick blender to blend it while leaving some chunky bits It was very good.

    I don't use pectin nor sugar in my starfruit jam. The fruit from my tree is so sweet and cooks up so thick, I just don't need it. In fact a boil a couple star anise for a bit and use that water to keep the jam from getting too thick and sticky.

    Hi, Thank you for this video. If I don't have pectin, what can I do? add more sugar and a bit of lemon perhaps?

  • @AveryRaassen

    @AveryRaassen

    3 жыл бұрын

    Hi, if you don't have pectin, you can use corn flour. If will give you a nice gel like consistency much like Pie Filling. Don't use too much, perhaps between 5 to 8% of total weight (Fruit + Liquid from Fruit + Sugar). Make sure you mix the corn flour with some water to dissolve it and then you can use it. With corn flour, the shelf life is far less than pectin so you will have to finish up the jam within a week to 2 weeks.

    Can gelatin be used in place of pectin

  • @AveryRaassen

    @AveryRaassen

    Gelatin does a different thing. You want to give the jam body but gelatin will set the fruit.

    It is necessary to add pectin

    Not entirely necessary but I would recommend it to help thicken it.
