How To Make South African Tomato Bredie

Tomato bredie or tomato stew if you want to call it that, is a traditional Cape Malay dish originating from Cape Town, South Africa. The dish is a favourite with locals and deeply rooted in the delicious Cape Malay food heritage and culture. Cape Malay food is lightly spiced and often has a sweet note to it. This bredie/stew is usually made with mutton, but any meat or even seafood like shrimps can be used. Lord, have it vegan if you must, but make it shall you. It's a guaranteed good time for your mouthole.

    Depending on what you have it with, you can flavour rice quite nicely so it’s not too bland. Them tiny hands are fun for videos but they suck for cooking)).

    Grew up on this; knew about it for 60-odd years. The best version was on the Blue Train somewhere north of De Aar one day, prepared by Chef Bobby Wessels.

    We we would cheap cuts of mutton or beef bones not a leg of lamb. This is a Cape Malay dish. Busy making mine at the moment.

    i am hitherto in complete ignorance of this intensely flavor-extracted stew-- if i can even call it that-- that i can smell simmering right through my computer screen. one thing i'll do differently when i try this odd, exotic, apparently awesomely aromatic Thing, and in the spirit of the way i see what you've done here, is to render that trimmed lamb fat and use it, lamb chitlins and all, in lieu of 'neutral oil'. generally see no reason to use a neutral oil when there is a fully partisan fat ready and willing to make a stand. it's like jesus said-- uh, ok no he dint quite speak to that. also i might debone lamb the night before, pressure cook the bones for like, 2+hrs, and use the stock from that instead of water to top up the Thing during the long simmer. thanks for another totally compelling prep and presentation

    Do it! Yeah you don’t need flour. The tomatoes and onions cooks to a puree which thickens it perfectly. 👍

    I never understood dishes that have both tomato and potato in them.. to me, it's just weird. Indian curries and aloos are among the wackadoodle combos that just make me shake my head. Ketchup on fries is the exception.
