How To Make Snapping Turtle Soup

Here is the recipe:
1-1/3 pounds turtle meat
4-1/2 cups water
2 medium onions
1 bay leaf
1/4 teaspoon cayenne pepper
1-1/4 teaspoons salt
5 tablespoons butter, cubed
1/3 cup all-purpose flour
3 tablespoons tomato puree
3 tablespoons Worcestershire sauce
1/3 cup chicken broth
2 hard-boiled large eggs, chopped
1/4 cup lemon juice
Chopped fresh parsley, optional
--In a heavy 4-qt. saucepan, bring turtle meat and water to a boil. Skim off foam.
--Chop 1 onion and set aside. Quarter the other onion; add to saucepan along with bay leaf, cayenne pepper and salt.
--Cover and simmer for 2 hours or until the meat is tender. Remove meat with a slotted spoon and cut into 1/2-in. cubes; set aside.
--Strain broth and set aside. Rinse and dry saucepan;
--melt butter over medium-high heat. Cook chopped onion until tender.
--Add flour; cook and stir until bubbly and lightly browned. Whisk in reserved broth; cook and stir until thickened.
--Reduce heat; stir in tomato puree and Worcestershire sauce. Simmer,uncovered, for 10 minutes.
--Add chicken broth, eggs, lemon juice and meat. Simmer for 5 minutes or until heated through.
--Garnish with parsley if desired. Yield: 4-6 servings.

    UPDATE: I said "I will never make this again" because turtle meat is about $25 a pound. Loved this recipe. You've got to try it at least once.

    I make this every year…and have for 25 years. This Friday it will be one of 11 courses for friends recreating dishes from my five favourite restaurants in New Orleans…virtually same as Commander’s Palace (But I use all turtle instead of some veal). The roux…always the secret to good Louisiana cooking.

    I caught a big snapping turtle in my bayou about 10 years ago. No one in the area knew how to clean it. Luckily, my 90-year-old grandpa knew exactly what to do. 4 hours later, a turtle sauce piquante was made. Absolutely divine.

    Once in a lifetime dish????? We eat it all the time in louisiana...LOL!!!! You should have browned that meat instead of just boiling it, then made your roux in the juices of that turtle. Kinda made it backwards in my opinion. You wouldn't have had to clean your pot that way and you would have retained all the flavor... especially if you would have brought your roux to a little darker stage like a peanut butter or carmel consistency.... You should give it another go... or a rattlesnake sauce piquante.....JMO

    Really like your show and very happy that you have reached the 1k milestone! As for the Snapping Turtle soup, I'm definitely going to pass on that! That's right up there with Frogs Legs, I've had them but I'll stick with the regular domestic meats, ;/ but thanks for showing us.

    Jack - you had it too easy. You ordered the turtle meat and I gotta say, that’s missing out on more than half the fun of making the turtle stew. Having caught & butchered a couple snapping turtles the last few years (usually I do one turtle per year) I can say that butchering them is the hardest part. The turtle is not easy to dispatch, not easy to get the meat removed from the shell & even harder to keep the carcass buried once your done. Last time I did one, was two years ago and I kept getting calls from my neighbors about them finding turtle claws in their yard. Critters kept digging up the parts I buried. The swampy stench of the turtle as I’m cleaning it makes it hard to expect such a delicious end result. The stew is a big hit when I do make it tho. I just took my last vac sealed turtle out to thaw. I’ll be making it again this week. The shells are cool to seal with poly and hang on the garage wall too.

    I was fortunate enough to have an old neighbor in the 60's that "lived off the land." He taught me how to catch, butcher and cook snapping turtle! Most people today don't even know how to fillet a fish let alone clean a turtle. Put that snapper in fresh water in the shade for a few days. This will remove the "swamp stench".

    I am Mongo just the same as turtle,frog legs and squirrel are normal for some parts I would say in cali those could be seen as exotic but in the south they're normal meats.

    rabbit is eaten worldwide. both wild and farmed. it is very common. most people know that rabbit is a common meal around the world even if they themselves would not do so. therefore, not exotic. however, when I tell people that I eat fried snapping turtle or that I would like to try rattle snake, and that look they get like I have 2 heads, that pretty much draws the line between exotic and common.

    Not so sure about the eggs. I know small diced carrots and celery are often used and taste great. Why "probably will never make again", didn't you like it? Or is the turtle meat expensive?

    That's nothing like turtle soup in Southern Indiana. Ours is more of a vegetable soup with a kick of many spices.... Oh, and we rarely put 'real' turtle in it. We call it mock turtle soup and it's made with ground beef because it just tastes better and it's not legal to sell turtle meat here so churches and mom and pop restaurants use ground beef instead... Very popular around here.

    Turtle actually have seven different types of meat inside. Cleaning a turtle is totally disgusting, the only meat are the legs, tail and neck - the rest is all guts!

    I've eaten turtle all my life I can't really consider it exotic nor is rabbit or anything else on the North American continent but things from another continent I would consider exotic. Just my opinion on it but good show and congrats on 1k

    Dont know how turtel workes, so i cant answer you, but boiling meat in plain water is a cardinal sin in cooking, and jack does not even know this.

    rtuy rty Not everything has to have that special something. Regular non-clorinated water produces a mighty fine meal as well. As a matter of fact, I have never used some of his exotic flavorings, because I don't like the taste

    rtuy rty True to a point. Some of his earlier videos helped my husband perfect a few methods of cooking; good lord, what would I know, or be able to tell a man a few tips after 55 years of actively cooking, lol, so I do thank Jack for that! Finally, a Prime Rib roast that's rare and a rare, medium rare steak, that is chewable. I think that is why Jack is branching off, because he can't think of new material.

    I LOVED SNAPPING TURTLE SOUP AS A KID BUT HAVEN'T HAD IT AS AN ADULT. MOM USED TO BREAD THE MEAT, FRY IT AND THEN SIMMER IT IN GRAVY. YUM! HER SOUP HAD MORE IN IT BUT I CAN'T REMEMBER WHAT. AS A KID WE ATE SQUIRREL, RABBIT AND VENISON. WE ATE GOOD. I DON'T THINK RABBIT IS EXOTIC. LOL!

    Because we have a deep rooted, underlying hated toward turtles, why else? Doesn't hurt that they taste great.
