How To Make Saltfish Accra | Foodie Nation

These boulders of flavor are definitely a must-have at many Trinbagonian house limes:
Yield: 18 - 20 Accras
INGREDIENTS
12 oz Salted Cod (Boiled and Flaked)
1½ Cups Flour
3 Tsp Baking Powder
¾ Tsp Black Pepper
½ Tsp Geera (Cumin) Powder
½ Tsp Chilli Powder
2 Tsp Minced Onion
2 Tsp Minced Garlic
2 Tbsp Minced Chives
2 Tbsp Minced Chadon Beni/Culantro
1 Tbsp Minced Celery
About 1 Cup Water
3 Cups Vegetable Oil for Frying
METHOD
1. Place prepared salted cod into a mixing bowl and add all the aromatics and spices.
2. Mix dry ingredients with a whisk and then slowly add in the water and mix together until you get a semi thick batter, similar to a thick pancake mixture. You may or may or may not need to add a little more water.
3. Let batter sit for about ten minutes to allow the flavors to mingle and for baking powder to activate further.
4. Meanwhile heat the oil in a high-sided frying pan to 325 degrees Fahrenheit.
5. With a tablespoon, scoop up batter and allow to gently fall into the hot oil to fry but don’t crowd the pan with too many Accras as this will reduce the heat of the oil and would not yield a crispy Accra.
6. They should take approximately 45 seconds to a minute on each side, as they become buoyant and start to float they are ready to be removed and placed on some paper napkins to absorb excess oil.
7. Serve with Tamarind Sauce as the preferred dip of choice.

Not usually a prob with males, in fact I see cooks using gloves in the US but the ladies in particular, my goodness. Then they say they are not cooking for us... Some ppl don't understand that "claws" have no room in the kitchen. It's a no - no for me.

Having long Nails is a Health Violation in some countries/ business. If you are going to be in a Profession using your Hands such as with Food & Healthcare, I think you should take care of your Nails & or wear Gloves 🧤
A lil dust of yeast, tsp of sugar for balance and a pinch of turmeric for color. Great job my loves

I stumbled over this channel on Pinterest after discovering for the first time that Accra which is the name of the capital city of Ghana where I come from, is also a name of a dish in Trinidad & Tobago. That's awesome! It's my wish to try this delectable dish someday.

My codfish is cod fish shredded, green seasonings, fresh pepper , egg , self rising flour and water to bind to a smooth texture but firm not loose. And drop in hot oil. But I like your one also. Keep doing those nice vlogs chef. I going try your Trinidad receipes. I is a bajan.🇧🇧☺👍

Oh my my mouth is watering ,I do my Accra the same way and I know it's delicious so you are not lying great job , I was watching one of the videos this week the person said they like the fast video quick and easy , you guys explain as though one is in culinary school ,j love it one cannot be understanding that crap of fast video I hate it no disrespect to whom is doing these videos , would not through ingredients in a bowl and say here this is the way to go crap love you guys cause be that's the best way to my mom ,dad and grandma taught me take your time.
