Creamy, flavorful, and delicious, Sabudana Payesh (Sabudana Payesh, Bangladeshi Tapioca Pudding) is a Bangladeshi dessert made with sago pearls, milk, and sugar. Prepare it on the stovetop or in an Instant Pot using my easy recipe (vegetarian, gluten-free).
How to make Sabudana Payesh on the stove

Wash the sago with half a cup of water.
Soak sabudana in half a cup of water for 4-5 hours.
Tip- If you forget to soak Sabudana beforehand, soak it in boiling hot water for 30 minutes.
Heat 700 grams of milk in a heavy-bottomed pan over medium-high heat. Stir frequently to prevent burning on the bottom of the pan.
When the milk boils, stir in 2 cardamoms and 1 bay leaf.
Boil for a while and stir in dry fruits, sugar and soaked sago.
Lower the heat and cook the pie until it thickens and the sabudana is well cooked (about 40-60 minutes).
The finished pie consistency should flow like custard. Stir frequently while cooking.
After cooking, the sago pearls should be soft, slightly sticky and translucent.
Note - Remember that the pies will thicken considerably as they cool.
Serve with dry fruits of your choice.
