How to make REAL CORN TORTILLAS from scratch - whole corn homemade

(For the masa)
-2 cups yellow dent corn

-5 grams calcium hydroxide

(Simmer that for 30 minutes and let sit at room temp overnight)

    For clarity, corn needs to be nixtamalized to be formed into a tortilla. Without this process of adding calcium citrate it will just be a clumpy corny mess. I have no clue how the mayans figured this out, but they soaked the corn in slaked lime and wood ashes that contain the compound to break down and unlock the nutrients and protiens in corn, and also discovered that this made the ground dried corn left over suitable for a type of flour when ground up and formed into a tortilla (or tamale)

    He has the correct calcium hydroxide in the ingredient list. I have no idea why he is saying calcium citrate.

    Thanks for this , loved my grandmother’s corn tortillas from scratch , she was a 100 years old in 1986 when she passed and I have not had this flavor in my mouth since I was 18 ,,,, thanks again !

    I've making masa from scratch for about 6 months. This last time I forgot to add the lime. The masa was super hard to grind but there was no difference in mouth-feel or taste. (Corona hand mill grinder - 35 minutes EXACTLY ((light simmer)) - then cover tightly - leave until the next day)

    It's an integral part of the process; it allows the husks to come out, allows the corn to properly form into a dough, and changes the flavor and nutritional content, so yes That being said, it's not calcium citrate, it's calcium hydroxide also known as "cal"

    Try two green banana leaves with waxy side facing each other. In the Philippines its used as wrap for pasty types of food.

    Awesome!!!! You won’t believe how difficult it is to find vids on nixtamal into tortillas! Question: how long do you grind? I’ve tried a food processor before and it turned out very sandy and wouldn’t come together like a dough.

    Cortney Hernandez just like making peanut butter in a food processor, you gotta keep going. Even when you think it won’t grind any more ,keep going. You’ll see the masa start to ball up and smooth out. If you must, add a touch of H2O to help it out.

    So what kind of corn do you need to have to make this? I'm from Northern Europe so we don't have same things sold at the market as u do. Can i use canned corn or does it need to be fresh?

    If I wanted to make some but had extra, what is their shelf life if placed in a ziplock? Or how would you store them for maximum freshness?

    I always put them in ziplock bags (for moisture) in the refrigerator (will last a couple of weeks) if you let them outside they will go bad in arou 1-2 days.

    Thank you. I got confused when they had this dry corn they were calling Maiz. Like is it corn or not. I geuss I cant use canned corn. Can I? What if I put the calcium stuff in that instead?

    Hi, it has to be dry corn, then cooked with the lime (Mexican cal) the lime powder breaks down the skin and this process changes the corn and it what’s going to make the flexibility of the masa. The canned corn is fresh corn, the dry corn is like an older fresh corn that has dried by itself in the husk. I hope this helps.

    @@deepdude4719 that would ruin the corn meal, it will become liquid, because the lime is meant to dissolve the corn skin at the same time that adds nutrients to the corn. That’s why he says (the video that I add) that you have to remove the broken corn that you find.

    Something wrong. They look a little too dry. They should puff up when you grill them, and be a little more pliable.
