How to make Ravioli from scratch without pasta machine | Italian recipe

Тәжірибелік нұсқаулар және стиль

Holy Ravioli! If you want to know how to make Ravioli from scratch, you should watch this video. I am explaining step by step how you make Ravioli without using a pasta machine neither a ravioli stamp. This easy recipe includes a dough recipe, a filling made of Spinach and Ricotta and a 'sauce' idea. You don't have to do the sauce like I'm doing, you could also just serve the ravioli on a plate with some fresh basil.
My new website is live! It includes also my new "Food wear for foodies" fashion line with jumpers, T-shirts and Accessories. I hope you like it as much as I do as I had so much fun while designing this. Click here to get forwarded www.forketti.com and tag me by using @forkettifood if you have bought something. Thank you! I'm a quarter Italian, and I love ravioli. You made this recipe fool proof! The wine bottle! You kept it 💯🙏 I don't have a rolling pin yet, I don't have wine either, I'm in recovery, but that never stops me from making great scratch made dough, for pasta, cakes, bread, or pastries! I use a rice wine,or apple cider vinegar bottle! Thank you again! I can't wait to try this! I'll make this later in the week. I'll let you know how it turns out for my husband and I. I already have a gut feeling that I probably won't be purchasing store bought ever again! 🙃 ❤ 😍 😋 🍴 🍽 🇮🇹

    Your video has been an inspiration for me. I went through the steps but had trouble with trapped air inside the individual ravioli and had to cut a slit in the side of many of the pockets to release the air, then seal the holes by massaging the dough. I did not notice any trapped air in your video. Any trick to laying the second top layer of pasta dough over the lumps of filling to avoid trapped air? Thank you for any response. Appreciate it.

    Wouldn’t recommend it. Spinach needs a bit of oil and heat to develop the flavours. It also shrinks a lot which wouldn’t happen when you add the raw spinach into the raviolis

    may i ask if there is a special reason why salt and pepper is named twice or is that a typo?

  • @Forketti

    @Forketti

    2 жыл бұрын

    Because you need it for the filling and for the sauce. Also olive oil is named twice. Check the white text in the top right corner in the ingredient overview to see the difference.

    Thank you for this video and recipe. Instead of using parmesan, I prefer the much more flavorful pecorino romano.

    Do you have to use spinach

  • @Forketti

    @Forketti

    3 жыл бұрын

    No, you don't have to. You could replace the spinach for pumpkin or make this recipe with a cheese filling. Just add your favourite cheeses into a bowl and mash it all together. Use a tablespoon to add the filling. Good luck 💪🏼

    No, that's too thick. Maybe you can better check the video at 3:54 when I lift the dough and you can see the thickness. Or pause the video at 3:56 and watch full screen. Have fun cooking!

  • @Forketti

    I would suggest to shape the left over dough into raviolis and freeze them. I have done this before and it worked well! Just make sure to add the raviolis on a tray with some parchment paper and a bit of space in between so they won't stick. As soon as they are frozen you can add them to a ziplock bag or Tupperware.

    Yes you can. Add them to a tray with a bit of space in between so they won’t stick together. As soon as they are frozen you can add it to a ziplock bag or Tupperware box.

    Sorry to hear. For the next time, check the flexibility of your dough before letting it rest. If it is not flexible you should knead it longer or add a little bit of olive oil.
