Raspberry curd is a great way to use frozen raspberries and get a little taste of summer even in the middle of winter.

Thank you for sharing this gorgeous recipe. Although I very much prefer raspberries, I’ll use blackberries instead because that’s what I have now. I suppose it’ll work. I wonder if you could kindly help me with two questions. 1) Do you think this recipe will yield enough curd to fill an 8-inch tart shell? 2) Will the curd become firm enough in the fridge so the tart can be sliced without the curd spilling?

I’m not sure about whether it would fill that size of tart shell or not; I’ve only used small shells. Yes, the curd will be thick enough to slice although changing to a different berry may change the consistency. I experimented with sour cherries and it didn’t work out.

@@theweekendbeckons9439 Thank you so much for your reply. That’s very kind. In fact, the curd didn’t firm up with blackberries. Then I made it a second time and added a little more corn starch and it worked well. Also the quantity of this recipe did fill an 8-inch shell but the layer was rather shallow - just so other people who might have the same question know. Finally, I think raspberries are indeed the best, a burst of flavor. ❤

Im definitely going to use this for my raspberry tart. Why wasn't she using her stove? Clearly filming over there wasn't an issue and the cord for the fp would reach over to the counter.... Using a noisy hot plate doesn't make sense.

Disney Duchess it’s an induction hot plate - we get far better temperature control on it than our regular stovetop
