How To Make Polish Kielbasa Cabbage Soup
INGREDIENTS:
1 TO 1 1/2 pounds sliced kielbasa
6 cups chicken broth
1 large diced onion
3 stalks diced celery
2 diced carrots
4 cups diced cabbage
3 peeled and diced potatoes
2 cloves minced garlic
1 bay leaf
salt and black pepper
2 Tbsp. butter or chicken schmaltz/fat
In a soup pot add chicken schmaltz/butter, diced onion, celery and carrots.
Sprinkle with salt and black pepper. Cook and stir for 2-3 minutes.
Add kielbasa. Cook and stir for 3-4 minutes.
Add minced garlic. Cook and stir for one minute.
Add cabbage and stir to combine.
Add chicken broth and bay leaf. Bring to simmer, cover and cook
for 20 minutes.
Add potatoes, bring back to simmer and cook for an additional 15 minutes.
Serve and enjoy.

    Looks good. I never had the soup. I'll have to try it next time I'm hungry for kielbasa and cabbage. I just always fried the kielbasa, cabbage, potatoes and an onion. Then I make a sweet & sour mustard/vinegar sauce to drizzle over it on the plate.

    @@TessCooks4u The sweet & sour of that sauce make it. Ya know how sometimes ya can get a head of cabbage that's on the bitter side? The sauce fixes that and it's not even noticeable. And it's so simple and it's so good on everything. Just render up a few pieces of bacon, enough fat to make your roux. Then in a small bowl I use equal amounts of vinegar & sugar, stir them till sugar dissolves. You can cut the vinegar amount in half and replace with water if you're not a fan of sour. You can also cut the sugar if you don't like it too sweet. I've found for me the half & half works fine. It's a forgiving sauce. Then add the mustard whisk it in well, any kind ya like. Then it's just a matter of stirring that into your roux. You can experiment with amounts to get the flavors how you like them. And that crispy bacon that's been rendered I always crumble and sprinkle on top of the cabbage and potatoes and kielbasa. I use this same sauce, only a tad bit thicker, for my german potato salad, it makes a great warm potato salad that ya don't have to worry about spoiling as much during summer picnics. So good. So simple to make. Just a basic, old timey, family recipe.

    @@TessCooks4u Made the soup and AMAZING. Girls chowed through it. Didn't have your Chicken Schmaltz but I did have some duck fat so I sautéed with that. Duck fat is so nice smelling. Took some to a neighbor I experiment on with my cooking and they enjoyed it as well. We are getting snow here east of SLC UT right now and expected to get 6-12" tonight, so this was perfect.     I just buy mirapoix at my Wal-Mart, saves chopping up celery, onion and carrots. Last time I bought just celery it rotted in my veggie drawer before I used it all. But I think I will make this soup tomorrow; would today but no transportation.

    Looks great. We will be trying it out this week. Do you have any sweet and sour soup recipes? We can only find sweet and sour soup at our local truck stop and have been trying to recreate it but can’t quite put my finger on what’s missing.

    Hi Jars. I have a hot and sour soup that is really good but not a sweet and sour soup. Would need more info/description of what is in there. Sometimes tamarind is used to create the sweet and sour like in Tom Yum soup. Happy New Year!!!
