What is Jerk?
"Jerk refers to a traditional Jamaican method of seasoning and cooking meats, vegetables or tofu. Rooted in ingredients from Jamaica’s fertile green landscape, jerk consists of an exotic blend of scallions, onions, scotch bonnet peppers, salt, thyme, allspice, black pepper and many other spices. Savoury, fragrant, and tenaciously spicy, jerk is a must have for that burst of flavour and a touch of heat." - source gracefoods.com
History of Jerk
"In the 1700’s, a group of Africans who became known as Maroons combined African meat cooking techniques with a mix of Jamaican spices. Their cooking style evolved to what we know today as jerk. The jerk name has 2 possible origins: either from the Peruvian word “charqui” for dried meat or the practice of jerking (poking) holes in meat to fill with spices prior to cooking." - source gracefoods.com

I love Jamaican, creole African and Indian cuisine over any other cuisine. 🥰🥰
People who come and criticize about the "authentic way"are so annoying. The real so called authentic way is practiced by a chosen few.
Thank you so much for this recipe, I tried it and it came out great 👍
Well look at Professor Chef Damien.🤭 I really loved this, it looks delicious . Really appreciated the tips and the additional ingredients that would elevate the dish. Keep it up.

Yes chef!! That really looks delicious and chef Damien always does a great job of making it look so easy, so doable... especially every time he says "listen" 😅...look how jerk on de menu for sure this week...thanks chef 😃👍
The real authentic Jamaican way you blend all the seasonings together by using onions, spring onions, pimento seeds, garlic, ginger, scotch bonnets, and the list goes on., and put on a jerk pan and covered with pimento leaves and log wood., Your way is Trinidad way, jerk chicken is dry not wet then you make a jerk sauce for it.
Man I've been on the jerk chicken for some time now and I love it. And Grace Hot is on point

It's going to depend on where you are. You can find the ground version almost anywhere under the name allspice though it won't be the same
