Here in Italy the Rucola is widely used with pizza, but not only with pizza, also with other dishes. A salad with Rucola and Parmigiano flakes and balsamic vinegar is also very delicious !

Thank you so much for this video. I recently discovered the panuozzo, and I've been very interested in it. However, all the videos I could find of it were made in a wood fire oven, which doesn't help me as someone using an electric home stove. This is the first video I've seen that shows panuozzo with an electric oven, and even compares it to the original.

I have just made my first panuozzo! If you are using an electric oven and pizza stone, 10 minutes in the oven might be too much! My first panuozzo was a bit too overcooked so first try baking it for 5 minutes and then later put it back in the oven for the cheese to melt and for the panuozzo to brown like Vincenzo’s friend suggested! My oven goes to 250C but it is quite old so I don’t think that was the issue.

Wish I could jump on a plane and get to Italy, I’d be there by lunchtime. I’d try every thing these two men can cook.

You can now get a portable pizza oven for under $400 now, and I’d bet these sandwiches would turn out great in that.

I wished you would make a cookbook Vincenzo! Maybe one with every region signature dishes in Italy. Spaghetti Aglio e olio, Cacio pepe from Lazio, Carbonara from Rome etc. I would buy it! :)
