I am not an expert like u but here is a quick tip. Do not add turmeric and methi in hot oil at once, if u do so then turmeric will get dark and give a bitter taste.... so, first fry methi and after it turns black add turmeric and fry it for just 3-5 sec not more than that...😊

Nice try but typically while making a meat time, it is not marinated beforehand and fried directly in the oil (add fenugreek or panch furan up to you) and once fried crisply then finally add spices and tomatoes garlic ginger etc. It is very different form of cooking from Indian style.
