Coconut Rice (Nasi Lemak Rice)
Serves 8
Ingredients
4 cups of rice (long grain basmati preferred)
2.5 rice cups of canned coconut milk
2 rice cups water
2 tbsp coconut oil
4 pandan leaves (screwpine leaves)
1 inch ginger (pounded)
2 stalks of lemongrass (pounded)
2 tsp sugar
1 1/2 tsp salt
Method
1. Wash raw rice 4-5 times (e.g., until water is completely clear)
2. Add all ingredients above in the rice cooker and press cook
3. When it is cooked, leave rice in cooker for a further 15-30 mins (keep warm mode)
4.Rake the rice with a rice scoop
5.Leave the rice to absorb further in the cooker for another 20 minutes
6. Serve hot or at room temperature
*If you want to cook a portion of 4, just half all the ingredients
