Facts only, as usual! As I often saw and experienced both as a server and as a customer, people tend to spend more when propositions are in the *need* zone instead of the *want* zone. By profiling your customers and listen to their body language, you'll know what to sell, and then be able to have higher checks. "High end" customers (I don't like that word but eh) might want a good bottle to really experience something, you might want to go with good french red wine, and regulars might want some local cheap wine, that's fine too, and here is the occasion to propose another round and sell 20 bucks more. Thanks for the vid, and for putting up front that aiming at sales is the worst way of selling. It's a shame to see waiters pushing, pushing, and just having customers buy less because of that.
