How to Make Mexican Style Pickled Onions! || Black Gumbo

It's time for another garden to table episode. We have a harvest of purple onions, let's pickle them. I will show you a simple recipe for making this Mexican classic. It is a wonderful garnish or relish for any dish, but especially for tacos. depending on the spices that you choose to use, it makes a great barbecue relish as well. This recipe is a vinegar based refrigerator pickle, meaning anyone can do it.

Note to self (this is my 2nd time making this-so good) Fill and tamp down into a sealable jar: red onions sliced thinly root to sprout - layered with - 1-3 jalapeños, sliced thinly, include seed Tamp down into jar. Add black peppercorns cumin powder oregano leaves garlic cloves, smashed Brine: In a saucepan heat bring to boil: 1cup combo: acv, lime juice, red wine vinegar or… 1 T salt 1-1/2 t sugar 1cup water Get air bubbles out as you pour. Cool to room temp. 24 hours+ in fridge.

I’ve found using Mexican oregano really adds to my homemade Mexican food game! It’s different from regular Italian oregano. I watch Views on the road, and she only uses Mexican oregano. Love having pickled onions on any and all food!!!

Love pickled red onion! If you want to remove bubbles immediately, try using a chopstick. It's my go to canning trick.

I made one batch of pickled red peppers last week to go with some steak quesadillas I recently made, but it was just very basic. Gonna be trying it this way next time, once my jalapenos are bigger for harvesting.

Loved the recipe, will try it next time. My pickled onions tend to have a Caribbean twist as I use Thyme and scotch bonnet peppers or habanero's. I love it on Fried Fish Caribbean style . sort of an easy pickle . I have onions growing , and some should be red , along with Jalapenos as well as my Scotch Bonnet . Plus being from the islands I love having lots of thyme. . Ninette Bird- The Caribbean Wife- Central Tx.

Funny story to share my son went to MI for a family reunion and went to lunch with some cousins, and my AZ brother. I also made pickled onions this morning. Was my first time making them so I hope they come out good. I also made some pickled peppers the same way, only I heated the brine to a boil and simmered it for 10 minutes before pouring into the jar of peppers. Your Mexican version of onions looks so good. Seeds themselves don't provide any capsaicin. But, since they have a good amount of surface area and the pepper's oils from the flesh and pith coat the seeds.

Hey Scott Enjoyed your video. I'm originally from Houston but live in Montana now and love using pickled onions with all kinds of meals. They're good with anything. Just wanted to suggest that you try adding one more ingredient to your recipe that REALLY makes them awesome. Try adding a little liquid smoke (I prefer hickory) to your recipe. I think you'll like it. It makes them truly unique and so much better. If you get a chance, try it and let me know what you think. Take care, from Steve here in Bozeman Montana.

Great idea, Scott. I use hot peppers in most of my pickles and I like to make pickled onions, but I've never added peppers to my onions. I'll definitely try this. Wonderful video!

Thanks Scott, I did some onions last year with infused vinegars, a mango-infused vinegar with brown sugar made a delightful pickled onion relish.
I bet that would be good made with red cabbage too
9/10 I deducted a point for not putting any hard-boiled eggs in there too!

Glad you speak English. You had me worried for a few seconds there. Ever tried making them with fresh lime juice instead of vinegar? According to a famous chef, that's what they use in parts of Mexico. I've never tried it myself but it would be a welcome flavor for tacos and other things.

You don’t have to boil the liquid, just stir to dissolve sugar and salt. Yes, keep pickles refrigerated.

I got a few hundred onions in the garden so I think I can spare some for pickled onions this year.
Add a bayleaf or 2
Cross grain or with grain is dependent on who you serve. Self, with. Others, who think onion breath is bad, might like cross cut ferment.
