How To Make Lebanese Garlic Sauce Toum

Toum is a traditional eggless emulsion loaded with pungent raw garlic, which gives it both its kick and the necessary emulsifiers to keep the sauce stable. It's perfect for grilled meat and kebabs or as a bold alternative to mayonnaise. Requirement: Must love garlic. This is one of the more versatile condiments to have on hand. It can outlast the sprouting fresh garlic in your pantry and is at the ready for marinades, dips and sauces and as a spread for any savory sandwich.

    Fantastic! Very well done. When I was a child back in Lebanon, a special treat was to pick up a roast chicken and bring home. It ALWAYS was sold with a few little containers of TOOM. You made it so authentically. I have seen many varieties ("cheats") done with egg white, or with boiled potatoes, or with cornstarch. But you did it exactly like it is traditionally done in Lebanon, and you made it look so easy. Love your passion for garlic. We make toom in our home every few months and eat it with just about everything. Thank you.

    I think two reasons why you’re so happy, first because making this sauce is touch and go. I bet you’ve failed many times before. Second, because this sauce is really to die for. So good. Which makes successfully making it all the more sweeter.

    Hi Leisa, Finally catching up with this. Such an interesting sauce. My uncle - who passed away many years ago - was from Lebanon. He and his brothers made all sorts of delicious things.     Depends . Some are and can take at least 7 hours. In Lebanon we have 120 sort of appetizers Without counting the main dish ( restaurants main dish ) are completely different from home main dishes ) And each area cook differently while the distance xan be only 5min driving. My mother is from an area my father is other one. Distance 10min. Hahah till how im confused by the difference and the cooking way and ingredients.

    Well done you've mastered the technique - I tend to also remove the Garlic germ from middle of the garlic reduces the Bitter burn taste - if you like your Ethnic food a great recipe for Hummus - 1 can of Chick peas ( make sure super dry with paper towel ) - 1/4 cup Canola oil - 1/4 cup lemon juice - Cumin powder - Himalayan salt - Desert Spoon Tahini paste - Oven Roasted Garlic ( in foil for 20 mins) If you have time buy Raw Chick peas & soak - pressure cook them remove husks & will be next level.. Enjoy & stay safe

    Being a military brat my family and I lived in Germany during the 50's. Back then so much of the meat was hung out in the air at the markets to be sold. Because of this worms were prevalent and frequently weren't killed out during the cooking process. My sibs and I all became infested with them. A German lady told my Mom to feed us a clove of mashed up garlic in a teaspoon of milk every night and that would get rid of them. Even though I was very young I still remember how much I loved it! Still do! So I'm very sure this garlic sauce was made with me in mind, lol! Btw...it worked on the worms!

    Now i know how to make the garlic smoothly elmusified, use food processor over blender, use fresh garlic, keep pouring the oil very slowly.

    Looks so yummy! Just a suggestion...next time you need to drizzle something into that food processor, try a small funnel. It should work really well. Bonus, if you use a really small funnel, it will keep the stream small, making it easier to drizzle the oil. That's how I do my mayo.

    Thank you for sharing your recipe I made one for the first time and it was failed that’s because the garlic was wet🤦‍♂️🤦‍♂️🤦‍♂️🤦‍♂️ which I didn’t know. When I found your KZread channel you mentioned 1 very helpful note “ it must be dry. !!!!!!! tools garlic etc. so I followed it and it was successful... be safe Garcia’s

    Hello there. What a fantastic video that you shared. I have failed at making this 3 times in the last several days. It just doesn’t emulsify. I found something interesting that you mentioned regarding putting the garlic cloves dry inside the blender. What I’ve been doing is smashing the cloves with the end of a cup to easily remove the skin. Could this be the reason that it doesn’t emulsify? And, how fast does the blade need to spin? Low setting/chopped setting or purée/liquify setting on the processor? Thank you for your time.

    I really love garlic spread, but I think I would probably use the ratio of 30 cloves to 3TBS lemon juice and 3 cups of oil. Just the thought of that extra cup of oil takes it over the top for me. It is really rich, but it is just too easy to sit and eat this stuff with a spoon!!

    I find what works perfectly for me is a cup of oil for every complete bulb of garlic. Then lemon juice and salt to taste. There's no real reason to alternate between oil and juice. You can easily do the juice last to taste.

    3 weeks in the fridge. Keep it in the cooler and the camping trip should be fine

    I add cold ice water.. oh my it is so fluffy and light,, a Lebanese woman who makes the best toum taught me. I also saw it on an overseas video.
