A hugely popular Osaka street food, Kushikatsu (Kushiage) are skewered meat and veggies that are breaded with panko and deep fried to golden crisp. Dip in a savory sauce to enjoy!

INGREDIENTS
2 cup panko (Japanese breadcrumbs) (120 g)
kosher salt
freshly ground black pepper
3 ½ cup neutral flavor oil (vegetable, canola, etc) (enough for 10-inch cast iron skillet)
- Kushikatsu Sauce (makes ½ cup) -
4 Tbsp Worcestershire sauce (usuta sauce)
2 Tbsp ketchup
2 Tbsp water
2 tsp soy sauce
2 tsp sugar
- Kushikatsu Ingredients -
9 quail eggs
6 asparagus
½ onion
1 bunch garlic chives about 20 stalks
½ cup sushi ginger
2 sausages
1 piece pork loin chop
½ chicken breast (butterfly one breast but only use half)
4 slices pork belly
- Kushikatsu Batter -
1 large egg
1 cup all-purpose flour
¾ to 1 cup water (180 to 240 ml)

We just visited Osaka this summer. I remember there is a street of kushikatsu restaurants near the Tsutenkaku. We didn’t try it because I am kind of afraid of the calories. Maybe I will try your recipe next time when I crave for the deep fried stuff. Really enjoyed your video!

That sounds AWESOME! Yeah pretty much anything... but if it's potatoes, kabocha, anything thicker piece, I recommend blanching a little bit (don't cook till mushy... then it won't be skewered). :)
How much money is needed to buy all these materials?
I went to Osaka only to try one and it was 130 yen for one as I can't take beef if include in the set.... I tried the sauce it was okonomoyaki sauce?
It's looks like good can I use 🐮 beef not pork 🐷

In case you haven’t found it, it is Kodoku no gurume. It has several seasons, but this particular dish appeared in one of the earlier seasons if I am not mistaken. One of my fave show, but may not be for everyone because there is no real plot.
I am in the process of becoming vegetarian so that limits what I can enjoy....but I could probably cook kabocha and sweet potato and perhaps? broccoli in this style.??? How would that be different from tempura?

This is actually a perfect vegetarian dish! I eat more veggies with Kushikatsu since it's so crunchy and delicious. You can pretty much deep fry any vegetables - not leafy vegetables like lettuce, but anything else. Tempura has no panko, just batter only. :)

Soooo why hasn't anyone questioned where to get "quail eggs" we live in McKinney, Texas USA and I don't even know what a Quail is... I had to Google it.. So can we use regular chicken eggs??????? This recipe looks amazing though despite my lack of pheasant research and knowledge.
