Japan rice can be found in genmai, haigamai, hakumai, and mochigome. There are differences in color, nutrition, and taste/texture. Here, I just used hakumai (regular white rice), but I sometimes like to mix it with mochigome (mochi = rice cake) so it gets a more chewy texture :) It might be easier to mix so it won't fall apart as easily, too, when making onigiris!

Don't worry, I'm not the best when it comes to crafty things but I was able to do it with no problem! :) To make it easier, you can also do the reverse where you cut out the smiley face and then take the seaweed paper that's left and wrap it around your rice ball like usual. The face will then appear on the surface of the white rice ball! :)

I normally would use white Short grain rice...long grain and even medium grain don't stick like you'd want your rice to stick, in order to make these onigiri. and she's right, the brand really doesn't matter, it's actually the grain size.

It may look hard, but it really isn't at all! At first, I thought I had to use toothpicks or something to put on the smiley faces, but all you need to do is press it on :) As long as you have fresh nori, it'll work out completely fine.

Nope! There's no particular "brand" that you should use just for rice balls or anything like that. You can use any kind of rice, but I personally like mixing regular white rice with mochi-gome (glutinous rice) so that it sticks together easier and it adds some chewiness like mochi! :)

it depends on the rice :) I recommend you to buy jasmine rice from an asian grocery store.. furthermore, it could have a different consistency when you're cooking rice in a pot.. you may have a better result with a rice cooker..oh, and in addition to that you have to be careful when it comes to the amount of water you put in ^^
