INGREDIENTS
4-lbs Whole Fish or Sliced Fish (Scaled and cleaned)
1- Teaspoon Fish Seasoning
1- Teaspoon Salt
1- Teaspoon Pepper
1- Scotch Bonnett Pepper
2- stalks of Scallion
2- Garlic Cloves Vegetable Oil for Frying (Enough to cover fish)
Clean fish with Vinegar and Lemon
BROWN STEW SAUCE
2 Tablespoon oil
1-Small Onion (Julienned)
1-Tomato (Chopped)
1/2-Green Sweet Pepper
1/2 -Red Sweet Pepper
4-Pieces of Scallion (Chopped)
4-Garlic Cloves (Crushed)
1-Scotch Bonnett
1⁄2- Teaspoon Ginger (Grated) or Ginger Paste
4-Sprigs Fresh Thyme
6-8 Pimento Seeds (Crush)
1-Large carrot (Peeled & Cut in Strips)
Okra (Optional)
1- Cup water or white Wine (I'm using Stone's Ginger Wine)
1- Tablespoon Green Seasoning
1-Teaspoon All Purpose Seasoning
1-Teaspoon Fish Seasoning
1⁄4-cup of ketchup
1-Tablespoon Sweet Chili Sauce (Optional, Red-Hot Brand)
1-Tablespoon Vinegar
1-Teaspoon Oyster Sauce or Soy sauce

    I tried your recipe today. It was delicious! Thanks for sharing. The only issue I had was the fish sticking to the pot. I always seem to have that problem with fish no matter how hot I heat the oil.

    Just try a different pot. Like a nonstick skillet or a cast iron skillet.

    Dry the fish 1st with paper towels in and out I put a little cornmeal or flour in my dry seasoning mix

    It gives its a great taste. I only add browning to brown stew chicken, oxtail etc but not to fish. Give the oyster sauce a try.
