It is dedicated salami hose. You can buy it at the butcher shop.
your salami's look delicious... a suggestion though... a piping bag would help fill the casing easier for you

It is called sous vide cooking. In the end internal temperature of the food is same like in traditional cooking.

The idea is that it cools down as soon as possible and stops cooking, this is achieved by putting it in ice cold water and not in the refrigerator. Put it there later.
