What makes this pizza greek isn't so much the toppings, yet it is how the pizza is cooked, with its use of oil to give it its signature crispy crust, as well as the cheese blend. New York native Serhan Ayhan grew up with Greek style pizza saying its "part of my origin story in the pizza world".
Dough Recipe:
- 700g bread flour (~12-13% protein)
- 375g Water (~53%, variable) warm, about 90-95 degrees F
- Yeast:
- - Fresh yeast (preferred)- 3.5g (.5%)
- - Instant dry yeast - 1.4g (~1.5 tsp) (0.2%)
- 7g Salt (1%)
- 14g Sugar (2%)
- 28g Whole milk (~4%)
- 7g Oil - (Soybean preferred) (2%)

Greek pizza super ultra mega fan here. I have never heard of Greek-style pizza before, but this one does not look far off from what we are used to around here. Still, it sounded cringy though. I am not hating; just saying.
