Handkäse is a small, translucent, yellow cheese with a pungent aroma that some people may find unpleasant. It is round in shape.
Often served as an appetizer or as a snack with Apfelwein (Ebbelwoi or cider), Handkäse is traditionally topped with chopped or sliced onions, locally known as "Handkäse mit Musik" (literally: hand cheese with music). It is usually eaten with caraway on it; in many areas, it is served on the side.

    They are an acquired taste but I love them. Handkäs mit Musik is extremely good I prefer the Palatinate version with Wine instead of cider.

    Thank you so much! I’ve been waiting for this since many years. Vi had a similar type of this lactic cheese in an other region where i grow up. There it calls Harzer Käse. This ist typical with cumin seeds. You can even find one with white mold (penicillium). I frefer to eat them with a little bit mustard on top. Thank you! You are the curdmaster!

    In Czechia, we make similar cheese called “olomoucké tvarůžky” (Olomouc cheese) and it’s one of our national foods. I had no idea Germany has their own version, and now I wonder - who copied who?

    Tuhle verzi prodávají v Lidlu v takovým zeleným obalu. A za mě je to možná i lepší chuťově. Tvargle jsou slanější, tenhle je takový jemný. Ale musí se dobře uležet, občas ještě mívá tvarohový prostředek.😊

    Co se historie týče, tento druh sýrů je doložen už od středověku. Olomoucké jsou vyráběny od roku 1876, ale určitě byl podobný typ sýra k nalezení v Čechách i dříve. Bude to spíše takový středoevropský jev, koneckonců jsme byli s Německem geograficky, politicky i etnograficky spjati.

    This is perfect. We always have a bunch of skimmed milk after butter making, and this gives us something to make with it other than dog cheese

    Thank you so much Gavin for this recipe. I live in Brisbane but fell in love with Handkäse when vising my wife's family in Frankfurt, mit musik of course. Never thought I'd be able to replicate it. That said, I thought the same about Domiati until your recent vid on that Egyptian delicacy! Now to order some Brevibacterium Linens from your site.... Please keep up the regional specialties. Just a PS, in German it is pronounced Kay-zuh. The umlaut over the a turns its sound into as if you were saying the letter A and the e at the end of a word in German is always pronounced. Thanks again and keep up the good work!

    I'd like to see you do a playlist on this channel of cheeses for beginners that don't require any special ingredients that you can't get at a regular grocery store, like rennet or cultures. (unless it's from yogurt. Are there any cheeses you can make out of yogurt?) There have to be other ones besides paneer.

    Hey Gavin, seeing as how it took a very long time for the rennet to set a curd, I wonder if using the flocculation method might be a good way to determine when to cut the curd? What factor number would you use?

    Hi Patricia. It's a difficult one to figure because the skimmed milk set so poorly. Flocculation method could be uses and I would use a multiplier of 6 to get the best possible curd set.

    Hey Gavin! I've had the pleasure of tasting Handkase some years ago, and I loved it! I've been making cheese occasionally, and now I'm interested in creating a creamy paste cheese resembling Portuguese Serra Cheese. Usually, when eating that cheese, we open a lid on top of the cheese and scoop that creamy paste into a toast or bread. Would you happen to have any tips or even a video I can watch that can help achieve such consistency?

    I do, but it depends on the temperature in the kitchen. In winter I just leave it on the kitchen bench, in summer in the cheese fridge.

    Oh yes. Handkäs mit Musik; Hesses gift to the world. If you like, you can process the cheese further and make Kochkäse out of it, which is an extremely tasty cheese spread for a hearty bread!

    Have you ever heard of ziergerkase? Its a whey cheese. I was looking through a cheese making book I bought to find a way to use all my leftover whey. Omg I just saw the part of the video with the big fart 😂😂😂😂 omg lol wtf hahahahaha its 4:26am and I started laughing out loud and had to restrain myself so I dont wake up my bf hahaha. Omg that was hilarious. But back to my question lol, have you ever madeba ziergerkase? If not would you consider doing so one day perhaps. I hate throwing all that whey out and I'd like to be able to make something other than ricotta with whey.

    Please remove the Bavarian folk music from the video, this cheese is NOT from Bavaria, it isn't eaten here, and I believe that the natives where it is traditionally made don't appreciate this cultural misstep.

    That's what the anglospere does to every culture. It's not specific to Germany and they don't do it on purpose. They just don't know much about the rest of the world. I could act offended about the constant bastardisation of scandinavian cultures and history all day (ever seen literally any show or video game about vikings?) but it really isn't worth it. You're just going to have to strap a belt on your lederhosen and stop being so easily offended.
