How to make easy zucchini slice

Zucchini slice is an all-round winner as dinner with a salad or packed in lunch boxes for school and work (RECIPE BELOW). Best of all, you can make this zucchini slice with any veggies you have in the fridge and then freeze it for easy meals.

FREEZABLE ZUCCHINI SLICE
Serves 8 Prep 15 mins (+ cooling time) Cooking 45 mins
4 bacon rashers, finely chopped
1 brown onion, finely chopped
2 zucchini, coarsely grated
1 cup coarsely grated pumpkin
2 cups frozen mixed vegetables, just thawed
1 cup (120g) coarsely grated cheddar
1 cup (150g) self-raising flour
½ cup coarsely chopped flat-leaf parsley
4 Coles Australian Free Range Eggs, lightly whisked
¼ cup (60ml) milk
2 tbs olive oil
1. Preheat oven to 180°C. Grease a 20cm x 30cm lamington pan and line the base and 2 long sides with baking paper.
2. Heat a medium frying pan over medium heat. Add the bacon and onion and cook, stirring, for 5 mins or until onion softens. Transfer to a bowl.
3. Add the zucchini, pumpkin, mixed vegetables, cheddar, flour and parsley to the bacon mixture and stir to combine. Add the egg, milk and oil and stir to combine. Season. Spoon into the prepared pan and smooth the surface.
4. Bake for 40 mins or until firm to the touch. Set aside to cool. Cut into pieces.
How to freeze: Wrap the slice pieces individually in plastic wrap, then place in an airtight container. Freeze for up to 3 months.

    I can`t find self-raising flour anywhere here in Germany...so what do I do ?? use baking powder ? but how much ?

    Just add 2 teaspoons of baking powder for each 150g/6oz/1 cup plain flour. Sift the flour and baking powder together into a bowl before using, to make sure the baking powder is thoroughly distributed (or you can put both ingredients into a bowl and whisk them together).

    you can use regular plain flour and put yeast in it but a little bit of yeast and pinch of yeast

    Kim Anh Nguyen All European countries also in US there is no SR flour... they sell Plain flour and you need to add baking powder to make it rise if you are baking cakes ..:)
