"Double ka Meetha" is a popular Indian bread pudding dessert, also known as Shahi Tukda. Here's a simple recipe for you:
Ingredients:
6 slices of bread (white or brown)
1/2 cup of milk
1/2 cup of sugar (adjust according to taste)
ghee (clarified butter)
almonds and pistachios (for garnishing)
1/2 teaspoon of cardamom powder
Saffron strands (optional)
Oil for frying the bread slices
Instructions:
Trim the edges of the bread slices and cut them into halves or quarters, depending on your preference.
Heat oil in a pan for frying. Once the oil is hot, fry the bread slices until they turn golden brown. Remove excess oil by placing them on a paper towel.
In a separate pan, heat ghee. Add the fried bread slices and cook them until they become crisp on both sides.
In another saucepan, combine milk and condensed milk. Heat the mixture on medium heat, stirring continuously.
Add sugar to the milk mixture and continue stirring until the sugar dissolves. Add cardamom powder and saffron strands (if using) for flavor.
Once the milk mixture thickens slightly, place the fried bread slices in the pan, ensuring they are well-coated with the milk mixture.
Allow the bread slices to soak in the milk mixture for a few minutes, turning them over to ensure they absorb the flavors.
Remove from heat and let it cool for a while. The bread will absorb the sweetened milk, making it soft and delicious.
Garnish with slivered almonds and pistachios.
Double ka Meetha can be served warm or chilled, as per your preference.
