How to make Coconut Candy

This recipe was brought to us by our much loved nanny of 50 years. Mary started working with us when she was about 18 years old. She had many yummy snack ideas up her sleeve. As such we were often spoilt with afternoon tea delights upon returning from school. Mary learnt this delicious coconut candy recipe from a Eurasian family whom she was working with before joining our family.
We hope you will try to make it and maybe it will become a tradition in your family too!
COCONUT CANDY
Ingredients:
900g freshly grated coconut
300ml evaporated milk (full cream)
400g granulated sugar
3 tbsp margarine
1 1/4 tsp salt
6 tsp vanilla essence
1/4 tsp red food colouring
Use a 8“ x 12” pan
Store in air-tight container in the fridge; consume within 1 week. It keeps for months in the freezer.
Anne’s tip:
For better flavour, use IDEAL evaporated milk instead of CARNATION. Ideal evaporated milk enhances the coconut flavour of the candy. This brand is easily available in Malaysia. However we could not find it in Singapore. If using Ideal evaporated milk, you will need to use 500ml. As there is more liquid, you will need to cook the coconut longer to achieve the correct consistency.

I found that this is a simple traditional candy recipe. Keep posting the unforgotten olden recipes which are still sought for. I do add pandan leaves . Will try yours. Wish to taste your candies personally. Very tempting Hahaha. Merry Christmas and Happy CNY.

It looks delicious ❤️😍 Dear Aunty, thank you for sharing your recipes to us. I love learning "old" recipes especially cakes and anything sweets because I want to keep the taste of my childhood going. I don't want to look back one day and say, I wish I had learnt a particular recipe. I am trying my best to learn old school recipes even though it's tough to get them right now especially for cakes due to family secret recipes haha. When I was hoping that I could learn from someone, your video suggestions appeared on my feed and I felt soooo happy and blessed. Can we reduce sugar for the coconut xandy?
Does it can be stored in air tight box at room temperature 25 degree celsius for longer days.. And for how much days it can be stored

For the candy roughly the stirring of coconut would be 30 mins?
Hi aunty thanks for the recipe but may i ask if we can use condensed milk n mix ideal milk instead of adding sugar n want to use butter..Can?
I don't have access to fresh coconut. Could I use preshredded, packaged coconut from the supermarket?

Hi Sara, in an airtight container it will keep for under a week in room temperature. In the fridge for 2 weeks, and in the freezer for 2 months.
Can I know how long did you stir the candy. Mine turned out super hard till couldn't even cut.

It will take about 40mins. Too long it will get very hard. Once mixture starts leaving pan, you should be alert. Cut while warm... say about 10mins after you have smoothed it out on the tray.

Hi there, it is difficult to give an exact time as the timing varies depending on the heat used. The most important thing is to test with a spatula towards the end (when the candy mixture is almost dry). If the candy doesn’t stick to the spatula, then it is ready.

That is the correct way to make candy.Do not fry the coconut and use condenced milk.
