I cannot believe some of you people. How can you complain about this? Ingrates you are. This recipe is brilliant, I just finished making it and it came out absolutely perfect. Big beautiful air holes in the crumb, amazing flavor and perfectly crisp thin crust. If the obvious typo in the website's ingredient list threw you, Chef specifically says in the video that there is just flour, yeast and water in the ferment. The small error wasn't obvious? Of course not. You're on KZread learning to cook, which makes sense because if you can't even a second to pay close attention to a FREE tutorial and answer your own questions, in any culinary school you'd be the main course. Shame on all of you. I'm glad to see at least some of the comments demonstrate some measure of gratitude. Thank you Chef.

So tell us ingrates what is the mistake? Is the mistake in his telling us in the video that the ferment uses only water or is the mistake in the directions at the link provided listing milk? How are ingrates to know? How did you know? Why is mixing up water and milk in a recipe a "small error", you arrogant SOB?

This is real ciabatta. I have seen so many videos that claim to be but when you see how it's made and looks when cut into turns out to be nothing more than white bread. Will be making this tomorrow. Thanks so much for sharing your recipe and knowledge.
Excellent video !!! I'm a bread maker and you gave many helpful hints. I love that you showed how to make buns instead of the whole slipper bc it is difficult to work with without these great tips. Thanks Fred :o)

I just finished my first attempt using this technique and it came out beautiful!!!! Chef thank you sincerely I now have a greater understanding of working with wet dough and actually made a ciabatta bread I am proud of. Now on to my next conquest "Sour Dough". -Gina.=}

You can see this is a great recipe. I make my costs in a very similar way except that I don't use a mixer, I just shape and fold during and after the 2 to 3 days fermentation...
OK, I want the most mind blowing ciabatta ever made, and I think this recipe is legit! I have watched this vid twice, and will watch another 5 or more times before I try to make this. Kudos to the Chef !!!
Hi there Fred. Thank you so much for making this video. I learned so much in just 7.33min. I am going to use your method next time I make Ciabatta. Did you lower the temperature after the bread had formed a crust, so that the crust did not become too hard and then carry on cooking the inside a bit slower? Anyway, I really like your no frills, no fuss, straight to the point approach to making the video. I have subscribed. Pleas make some more videos.

Seen alot of how to ciabatta vids...Not many actually end up with ciabatta. Those look perfect. For those annoyed that the crumb is "heavy"or strong in structure, it should be. A strong,open cell structure.
Been making ciabatta but not getting the big prized holes. Will try out your recipe soon n hope to be successful.

If using fresh yeast, what will be the qty to add in the 12hr ferment?

Hello there, A few years ago I could access the link that the nice chef upload in a pdf doc with this and other recipes. I download the pdf and email it as I thought it was in a safe place. Recently I wanted to make ciabatta and google drive prevents me from accessing the link. it asks for permission to access and saying this again and again. Do you have the ferment recipe? What you say in this video and what is listed in the directions in the link do not agree. Here you say the ferment contains wholemeal flour, white flour, yeast and water, "that's all". Later as you nix the dough the only liquid you add is water.

Hi you said on your written receipe for ferment 500g flour, 100g wholemeal flour, 10g yeast and 400g milk and on your video you said you use water instead of milk to ferment so can you really tell me what did you use milk or water? Because in your receipe I haven't see you to use milk at all. I followed you ferment receipe and I add milk but it doesn't look like your ferment. Can you guide me please.

There are 2 parts to this recipe. The first part is the ferment which is where the flavour is developed and normally is done a minimum of 24 hours before. This is what contains the milk. The second part is what you've just watched, and it contains water. Part 1 and 2 are combined in the mixer. All in all, about 1.1kg of flour is used, and about 850 grams of liquid. I know this is a late answer to your question, but if it doesn't help you, it may help someone else...

On your web page for the ciabatta bread the instructions state. 1. Prepare the ferment 12 hours in advance. Mix flour, yeast, " milk and sugar ". Cover and allow to ferment. But, you don't give any amounts or even mention milk or sugar in the ingredient list ? The bread looked really good in the video so I'd hate to waste all the time making it wrong so, could you please clear up the confusion. Thanks I sent you an email

This bread is delicious with a couple of teaspoons of dried Tuscan herbs mixed in - basil, oregano, marjoram, rosemary. Then some sprinkled on top, and finally a little salt. Delicious!

Fred your ciabatta sure looks good BUT when I look at your recipe on your site, the ingredients list does not include milk or sugar but during the process you mention these items used. Not very professional and a rather sad disappointment since I was looking forward to trying the recipe.
Funny.. you look at the ingredients of store bought ciabatta, and it lists 20 ingredients

Disappointed. I just finished making it and it turned out terrible. Heavy and gluing in the middle. The written recipe does not align with the video, there are variances in the theory and practical of Chef Fred's instructions. Although the video is very good Chef Fred your mix doesn't look as though it has wholemeal flour in it. I tried Chef John's no knead ciabatta and that was terrible too. Not sure what it is... perhaps men have a different way with dough than women. Anyway I kept searching and found ChefdeHome.com. Her Italian Ciabatta Rolls are just fabulous and I have made two batches successfully in one day. Yahoo! finally did it. Wish I could put up pictures of Chef Fred and ChefDeHome.com ciabatta recipes. Thank you ChefDeHome you've truly restored my faith in bread making, and your rolls were absolutely delish! BIG TINY - I definitely agree with you, this recipe was heavy and stodgy.

You could search out Ciril Hitz's version, though he doesn't provide a recipe (you could borrow his book "Baking Artisan Bread") and you'll need to scale his recipe for your needs, plus it takes quite a bit of time, but if you want excellent bread you'll have to invest the time -- /watch?v=LFja1ShZFsA
