How To Make CHICKEN MADRAS (STEP BY STEP GUIDE IN ENGLISH)

How To Make Chicken Madras At Home - Chicken Madras Curry - Chicken Curry Indian Style
Chicken Madras curry is a fairly hot curry made with fragrant spices that has a thick red gravy which is creamy with the addition of coconut milk. Although it's named after the South Indian city of Madras (now called Chennai), Madras curry actually originated in British restaurants. As with any curry the flavor gets better with time and it tastes better the next day. It stays good in the refrigerator in an airtight container for 3 to 5 days and it gets better and better in terms of flavor.
Ingredient proportions for making chicken madras curry - Serves 6 to 7
* 1.5 kg/ 3.3 lb bone in chicken pieces. You can use chicken thighs or drumsticks or a combination of both. You can also use boneless but it is best to use chicken on bones for curries as the bones impart a lot of flavor to the gravy.
* 460 gm / 16 oz / 3 large onions. I used 2 onions first to cook with the tomatoes and then used the third onion while making the chicken.
* 250 gm/ 9 oz / 2 large red ripe tomatoes. If you are making this at a time when tomatoes are not in season then you can also use half a cup of canned crushed tomatoes/ 1/3rd of a cup of tomato puree (passata).
* 1 tablespoon tomato paste
* 30 gm /1.05 oz / 12 large garlic cloves
* 25 gm/ 0.8 oz ginger
* 6 green cardamoms
* 4 cloves
* 1/2 teaspoon cumin seeds (jeera)
* 1 & 1/2 inch length cinnamon stick
* 2 teaspoons salt or as per taste
* 1 teaspoon sugar (optional)
* 1 teaspoon kasoori methi (dried fenugreek leaves)
* 1 cup coconut milk. You can use 1 whole can of coconut milk if you like the flavor of coconut.
* I added a total of half cup of water to wash my blender jar and and spice cup goodness. Please remember that this dish has a thick gravy.
* 2 tablespoons chopped coriander
* 1 tablespoon lemon juice/tamarind sauce/1 teaspoon tamarind paste
* 4 tablespoons oil
For the spice paste -
* 2 & 1/2 tablespoons Madras curry powder. Add less if your curry powder is too hot.
* 2 teaspoons Kashmiri red chilli powder. Add paprika if you want to avoid that heat.
* 1/2 teaspoon turmeric powder
* 1/4 th cup water
For the tarka -
* 1 tablespoon ghee. Can even use butter/oil
* 3 dry red chillies (adjust proportion according to preference)
* 6 to 8 fresh curry leaves (optional)
Serve this with rice/roti/naan but it tastes best with hot steamed Basmati rice.

    Hi Bumbi, i made your madras, including the prep of onions, tomato's etc but i was doing a pot style dish for about 15-20 people, i did have to tweak some spices etc because i wasn't sure of the quantities with one dish to big pot. I cooked it the day before, because of time on the curry day and the result was amazing, the whole pot got eaten, it was voted as one of the best meat curries of the day, even one young boy ate 3 plate fulls, he loved it. Also another eldest son of the group, who doesn't really eat curry, was gratefully made up with a lovely curry he has had for a while. So hats off to you Bumbi for a fantastic dish and sharing it with us, i am now in the process of your Aloo Gobi 🙂

    I learned to cook Indian dishes from a British Indian Restaurant (BIR) chef and they were the only Indian recipes I knew for many years until watching this channel. In BIR recipes, I was taught to always add a teaspoon of sugar when adding tomatoes, not to sweeten the dish but to neutralise the acidic content of the tomatoes. Likewise, when adding turmeric, always add a pinch of black pepper powder so that the turmeric is regulated - because turmeric is good for the inner organs but acts fast; black pepper slows it down and makes the benefit last longer. So, if adding one teaspoon of turmeric, add 1/8th teaspoon of black pepper powder, not for taste but to regulate the beneficial characteristics of the turmeric. NOTE: in UK, we do not have access to all of the spices available in their raw state in India, so restaurant chefs here have to make do with powdered spices - and they do a very good job of it. Some modern curries were even invented here by BIR chefs. Brits love curries...!

    I prepared this recipe today for a friend to arrive at 1pm. I also prepared a cross between Saffron rice and Murghal rice (but using paprika, not saffron). It was frankly way beyond expectations! I'd say better than any UK restaurant Madras....we're in SW France, where no restaurant has clue 1 about curry. In Paris I'm sure you can find good authentic curry but not in deepest Limousin....maybe Bordeaux, Toulouse, Marseilles. Thanks you, that's a brilliant recipe. My friend was knocked out, and she's traveled everywhere including Tibet, and knows her curries!

    Really true, this was amazing but you have to do it right, follow what she says as to the techniques of when to add what etc. Those combinations of flavors were amazing. But I could see how your typical weekday mom who cooks for her kids might find this a little too much work. Here kids, just have these lunchables or a frozen pizza

    I have copied so many KZread curry recipes but this is clearly the best. My twist was that I used Ghee for frying the onions for that extra flavour, but I like it hot so 4 x Kashmiri powder. Beautiful, thanks Bumbi

    So I made my 2nd Bumbi curry & once again it was very delicious & tasty, I made this madras more because of my husbands taste he likes then slightly hotter,, he loved it so much, so once cooked I separated a portion into another pan & added some more of the coconut milk & plain yoghurt & it reduced the heat to my taste I loved it was still tasty & spicy but not too hot! So 2 curries without the effort of making then from scratch...once again your videos are very clear & nice to watch...thank you

    I had a very hard time to find madras powder, I went into a store that has everything Indian, they must have had 27 different powders I never heard of but could not find madras powder, then finally a tiny box of it. I think it makes a difference, it's great stuff. I liked adding the tamarind paste at the end also and the chili oil. These recipes take a lot of prep work but when you are in the mood to cook, it is well worth it. I got lazy a few weeks ago and used jarred sauces but it just does not compare to bumbi's recipes using fresh garlic, ginger and all those wonderful amazing spices. what I do is make the basic spice paste and blended veggies ahead of time, then finish it later. My cabinet is a mix of mexican and indian spices and chili's so it takes me a long time to just find all the right spices. It came out fantastic, the layers of flavor are amazing, just bursting with the various flavors. I made mine a little hot using both the kashmiri and the more hot chili powder. Hours afterward the entire kitchen area and beyond smells of all these wonderful spices. I made too much gravy, which is a good thing so now I can just brown some more chicken and add it to the left over sauce. I looked at a few others recipe's but I always seem to come back to Bumbi!

    Seeing you here after a long time. I am glad you tried this recipe. If you cannot find Madras curry powder just use Sambar masala which you will be getting at any Indian grocery store. Just keep in mind that Sambar powder may make the gravy a little bit thick. Thanks for your feedback.

    When I first started cooking the yogurt always split whenever I added to the pan. I learnt it after a lot of failures. That’s why I am very particular about explaining in detail whenever I use yogurt while cooking. I am glad it helped you.

    I just wanted to say that I made this curry the other day for the 5th time in recent months. Chicken Madras is one of my favourites and this recipe meets expectations with bells on. Love it. I always make a but too much sauce and freeze it down with uncooked chicken in the sauce. It marinades it wonderfully and then when i am tired and i want my favourite food, its right there! I always have coriander in my fridge, washed and wrapped in paper in a container. You are a genius and such a good teacher. I often wish we had smelly telly…. The aromas which fill your kitchen must perfume the house with deliciousness. Thank you Bumbi x

    I have loved Indian food since I first tasted as a small boy. Cooking Indian food has since been a passion of mine, and the dishes I make are usually British Indian Restaurant style.     Bumbi, thank you for posting another amazing video. Just wanted to ask one question, why don't you want the onions not too brown? I always thought in Indian cooking the onions should reach and nice dark brown colour because apparently that's where the flavour is?

    There are certain recipes like biryani, korma where the onions need to be quite brown. Other than that according to me if the onions are browned up too much it destroys the color of the gravy and even the taste changes. I like just that right golden brown color , too much browning sometimes make the gravy taste bitter.

    Hi Bumbi. Hope you've been having a nice day. I made this fantastic curry today. (Recipe 133) It turned out so delicious 😍My son was just amazed by it, we both were. The wonderful smell while it was cooking was making us feel very hungry 🤤We absolutely loved it. We had basmati rice and naan bread with it. Such a delightful meal.     I made this and it was very good. Not like other madras curries I’ve had in restaurants but delicious. One of my good friends is actually from Madras in India. She said this dish does not exist there. She asked me what the hell is Madras curry anyway? She is from there and has never heard of it. Not sure of the history of this curry.

    I recently made a batch of curry powder. After a bit of research, I find that I can use this instead of madras curry powder, but add paprika for the red color and leave out the turmeric. I have already had a sad experience with kashmiri chili powder, despite Bumbi's warnings to add some, not all...and then taste before adding the remaining chili!! 😵‍💫😵‍💫

    Yes, you definitely can use normal curry powder with addition of paprika if you do not want to buy Madras curry powder.

    I’ve heard a number of cooks talk about using Kashmiri chili powder “just for color”. I don’t know if there are different heat levels of Kashmiri chili or if it’s just the difference between the Indian and Northern European pallets, but the Kashmiri chili powder that I have is very hot. I like the heat, but a half teaspoon of the powder I have makes an entire dish plenty spicy.

    I think Kashmiri chilli powder is probably the east's equivalent to the standard supermarket chilli powder you can get in the west which is not hot but for us Kashmiri is still somewhat hot. I find it's fine unless I also put chopped chilli's into the recipe - both together are a no no if you can't handle heat.

    You can use chicken breast but the cooking time will be much lesser compared to chicken thighs. The process of cooking will remain the same. I personally like using thighs as chicken breast seems to dry out and tastes fibrous

    I couldn’t find madras curry powder locally so I used a recipe for the curry powder from KZread. I’m afraid the result was quite disappointing. I’ll have to find a different recipe for madras curry powder.

    Hi, you can also use Sambar masala as well. All Indian grocery stores sell Sambar masala .

    Hi bumbi, a wonderful recipe with clear directions, as usual, but my husband loves lamb,and I was wondering if I can use lamb, in the butchers the other day I saw lamb chump ends over at the back, and asked if I could buy them, which I did, can I use these, Thankyou, not sure what lamb chump ends would be in the u.s. as I the uk.     Can i make a respectful comment? I would find your recipes easier to follow from a recipe book for one main reason. Before i cook any of your stunning recipes i have to go through the process of both watching your video and collating ingredients before i even get a pan out… i like to get everything measured out before I start to cook. It saves mistakes. But in order to do that i have to sit down with pen and paper and write everything i need down before i can even start to get ingredients out. Is there any chance you wonderful lady if you could release a cookbook? You have such a stunning ability to teach a book to go along with your visual instruction would be amazing. Will you think about it?
