Rachael, I love to watch you prepare food. Your 2 fisted method is so helpful. Your meals are absolutely delicious. Please keep making cooking videos. Your calm and thorough presentations are wonderful. And your Ron is a lucky man!

My mother in law made these monthly, for her family of 11; boiling, then shredding the chicken, with onion, rolling them in hard, dry tortillas. We skewered them with toothpicks, and we will she fried them until they were golden, some dark, brown. There were very few left when dinner was over. When I would find them, I ate all of the burnt ones. They were the best. Your way, I cannot wait to try. Thank you for the time, you, and your Ron, take to make these videos. They are going to become a standard for us “güeras”; wanting to learn the Mexican culture, and passing it along to our families.

I write everything down as you’re telling us the ingredients to use and I have fun with it! Ron is so Lucky to have you as his wife! How many years have you been married and I think you have a daughter but we’ve never seen her. Do you have GrandChildren? It would be great to see pictures of them. YES 🙌🏼 👏🏻👏🏻👏🏻!!!! The whole video was just amazing like all your others. The part when you put your salsa on the end of the taquito before taking the bite … made me say ummmmm 😋. When I cook , I bring the heat. Rachel thank you 🙏🏼 sincerely so much from the bottom of my heart and from my kitchen to you. It’s been very hot here lately. I’m from The high Desert and it’s in the hundreds everyday here now and I don’t want to use the oven . I made this today and it was just perfect 👍🏼. On the side I made homemade refried beans ( your recipe ) and Mexican rice ( Which I think I’m good at ) I wanted a hardy filling meal and this was the one ☝️ Rachel may God keep blessing you so we can all keep enjoying your ways of cooking and you being able to share to all. . Thank you so much for your comment...the trick is to wrap them nice and snug without tearing tortilla, then setting it down carefully to fry, seam side down on medium/ low heat, then flip after 1 1/2 minutes, try it till you get it my friend, thank you so much for your comment. ❤

I made these, first attempt, for my son. He filled his plate and went into his room to eat them. So wasn't sure of his opinion. A couple minutes later he came out and said, they were the best tacitoes he ever had..made my day. Thank you Rachel. Next attempt is beef enchiladas and your enchilada sauce. ❤️😋

Many moons ago and as a graduate student studying Mexican cuisine in Cuernavaca, state of Morelos, I studied with "Las cocineras viejas" in the mountain towns around the twin volcanos in Central Mexico. It was an invaluable experience for me and I learned so much from these ladies, all whom I called "mis abuelitas". I am passing on a bit of cultural cuisine information to you in hopes you can use it in a video. The ancient language of the Aztecs is called Nahuatl and is still spoken today in some of the more remote areas and pueblas of Mexico. One of my abuelitas conveyed to me that "guacamole" is not a dish-rather, only means mashed avocado, nothing else. Guacamole came about during the Colonial Era in Mexican history. It was here that the Guacamole came about, adding Mexican lime juice, minced onion and salt. That's all. These people whol add tomatoes, cilantro garlic, jalapeño, sour cream etc. are making a great error-"gringo avocado dip" more than likely but certainly NOT "Guacamole as we should know it". Thank you Rachel for this wonderful recipe! **Chicken and Broth** 2 chicken thighs (skin off) 2 chicken legs (skin on) 1/4 teaspoon whole peppercorns 1 bay leaf 3 medium garlic cloves 1/2 small onion 1 large carrot (cut into big pieces) 2 celery ribs (pieces) small bunch of fresh parsley 1 1/2 teaspoon salt **Blender Ingredients (Salsa)** 4 medium Roma tomatoes (blanched, cored, skin removed) 5 serrano peppers (blanched, stems removed) 1 jalapeno (blanched, stem removed) small bunch cilantro 1/4 small onion 2 medium garlic cloves **Saucepan Ingredients (Salsa)** 2 tablespoons vegetable oil 1 tablespoon onions (finely chopped) blender ingredients (from above) 1/2 teaspoon dried oregano 1 teaspoon chicken bouillon 1 teaspoon tomato flavored chicken bouillon salt as needed **Taquitos** Shredded chicken from above 1 (8-ounce) block Colby Jack cheese, grated 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 - 1 cup canola oil (for frying taquitos) 15 corn tortillas

HI! Making chicken flautas with all the fixings is my favorite. I love the way you enjoy each flauta. I love eating them and when the lettuce falls off and the salsa drips on it, it makes everything blend and taste sooo delicious! Just like that, "un poquito de todo", Love your video! I grew up in a very Mexican traditional family. Mom loved cooking using the molcajete and the tortilla press. I learn something new from each one of your videos. :)
