    I made the dressing and it is a blessing, smooth and creamy and has multiple applications. I am on the AIP diet and I use avocados to replace mayo in tuna salad. Can't wait to use this dressing in my next batch!

    Oh wow, I love avocado and broccoli. I bet that's going to be a magnificent salad. I am definitely going to try it this weekend. And I bet that those cranberries and that lemon juice just makes it so delicious. Thank you for sharing, that will be my Sunday vegetable this weekend.

    used this dressing but with macadamia nut oil instead of olive oil, on a pasta/chicken/red bell pepper / peeled apple, and onions soaked in ACV for my son who has Crohns ulcerative colitis. Had to peel the bell pepper first. Was really good as we are in summer now, and cannot have many of our usual summer foods due to his dietary restrictions. Thank you. I will make your broccoli version for myself. xxx

    Looks like a great salad. I like the stalks much better than the florets! I almost always use a steamer basket when doing broccoli or califlower. Oh, and thank you for showing the broccoli par-cooked! Raw broccoli is not "Good Eats".

    I made this. Very easy and very good. I also took som e of the dressing and put it on some sautéd chicken thighs. That is tasty.

    BTW, this avocado dressing also works on Brussel Sprout salad just as well as Broccoli salad. I tried it and it was great.

    First of all, love the competence of soft spoked chefs. Thank you for this revised freshened up recipe. But, I am not sure I can get fresh tarragon. Minced tarragon? I've never done that.

    I didn't know you could peel the stalks and make them edible. I've always frozen them to throw in a stock or soup for flavor.

    Will be trying this out. Instead I will be putting a little avocado oil and a good beef rub on the broccoli and searing it on the grill over some post oak. Should be a great match for the dino ribs that have been smoked for 5-6 hours.

    Yay, a vegan recipe! Avocados definitely make a lovely and decadent dressing. But I’m not sold on the idea of dried cranberries though- Has anybody tasted this recipe yet?

    My broccoli salad calls for raisins, which adds a nice sweetness to the salad. I would think cranberries do the same thing.

"The Complete Vegetarian Cookbook" (2015), "The Complete Mediterranean Cookbook" (2016), "Vegan for Everybody" and "Nutritious Delicious" (2017), "Cook's Illustrated Vegetables" and Mediterranean Instant Pot" (2019), "The Complete Plant-Based Cookbook" (2020), "More Mediterranean" and "Healthy and Delicious Instant Pot" (2021), "Cooking with Plant-Based Meat" and "Vegan Cooking for Two" (2022). Obviously not all entirely plant-based, but it does seem they've been at it for at least as long as this list of cookbooks indicates.

    I tried this and....I am somewhat disappointed. The dressing was brilliant. 10/10 would use again! But the broccoli was...flavorless. It tasted like steamed broccoli. Steaming sucks all the flavor out of broccoli. No matter how well I dry it, it still tastes watery. This salad would be 1000 times better if the broccoli was roasted first. It would also be a nice textural experience as you would get crispy bits. I will be making this salad again but, sour cherries instead of cranberries and roasted broccoli instead of steamed. Thanks for the idea!

    Asking for myself: I tried unseasoned avocado before, taste like green butter...need encouragement before I try this recipe...looks soooo scrumptious. Also, how long before it turns Brown because of the exposure to air?

    Costco sells a model with a tab that cuts the clingwrap. For me, it eliminates the sharp metal edge that always scrapes me.
