How to make Banh Bo Nuong - Super easy steps with Lanie Cooks

Here's my successful recipe:
1 bag tapioca starch
2tsp pure vanilla
1tsp pandan extract
1tsp butter, melted
2cups sugar
1 can coconut cream
8 eggs, room temp
2bags alsa baking powder or Dr Oetker baking powder
**pictures of ingredients in comment feed below
Mix all ingredients with a soft hand
. **The key of having honeycomb texture is to NOT OVER MIX!***
Bake pan first in oven for 15 minutes at 350.
Pour batter mixture through strainer.
Let sit for 15 minutes.
Butter pan.
Pour mixture in pan and bake at 350 for 45 minutes.
Take out of oven and let of sit on cooling rack for 15 to 30 minutes if you have the patience. 🤣
Then cut and serve. Enjoy! ❤

Hi Lanie, I made this today 1st time & it was a success ❤thank u for sharing your video! I didn’t have the vanilla sugar, so I used 1 teaspoon vanilla essence instead. I used normal Baking Powder 22g and it turned out great (as I can’t find the Alsa brand here) so for those who don’t have the brand in the video, fret not! This recipe is a keeper & I will certainly make it again ❤️👍

I will definitely give myself another chance with your recipe it looks simple enough to believe in myself. I did it once years ago and failed miserably with a much more difficult recipe.

LANIE COOKS i tried it and it looks great! Thank you! Only step I skipped was preheating the pan. 😣 lol big mistake. The bottom was stuck onto the pan. So next time, I’ll make sure I preheat the pan with oil.

@lanie cooks, can we use the butterfly brand flavoring essence pandan? The pandan extract wasn’t available at my local Asian store.

Hi How do you prevent the cake from collapsing when you are done baking and keeping the oven door slightly open. I bake 50 min at 350, I see a nice rounded top on the Bundt pan. I turn my oven off and slightly open the door to cool. And then is sinks down quite a bit
What size is your bundt pan and where did you buy it? Thank you.

I only found that alsa gave me the best results for my banh. But let me see what e alternative is and let you know!

J M-A alsa can be found at the asian store. I am not sure if the ration with any other flour for it not to mess up the cake!

Hi Lanie! You didn’t mention the vanilla sugar in your recipe that’s typed out. Do we need it? Will it affect the honeycomb texture if we do not use the vanilla sugar?

Hi - Yvonne- no, it will not affect it. But I’m pretty sure I included it in the video unless my hubby accidentally cut it out. 🤦🏻♀️ but it does not affect the honeycomb texture at all. Over mixing the eggs will tho.

The video is good and informative. However can you specify how much tapioca flour/starch and how much baking powder? I have the loose versions of these ingredients so I don't really know the measurements. Thank you!

Idk if you’re still looking for the answer, but at the start of the video she shows the bag at 3:43, and it shows a net weight of 14 oz or 400 grams of tapioca flour. :)

I used 400grams tapioca flour & 22grams normal baking powder & it turned out great!

Don’t give up! If it doesn’t turn out right, it could be bc ingredients are expired or over mixing of the eggs. Keep trying! Xoxo
if you mix the sugar and coconut and flour first, you can get rid of those lumps easily without beating the eggs up too much, then incorporate the mixed eggs in.... then strain.

If you pour the wet mixture slowly into the dry ingredients whilst stirring, you won’t get lumps in your cake mixture

I didn't use a bundt pan but a regular round pan and the middle came out runny. I guess you NEED to use the bundt pan. 😔

Your ingredients could have been expired. Common with bad baking soda or alsa.
