Bearded and Bored #AppleJack Recipe - 30% to 40% ABV:
1 gallon - Apple Juice - NO PRESERVATIVES
3 cups - Dark Brown Sugar
1 tsp - Yeast Nutrient - amzn.to/2rJdDYp

1 can - Frozen Apple Juice Concentrate - thaw on bottling day

1. Combine all ingredients, airlock and ferment the apple wine for a month or more until fermentation is complete and wine is clear.
2. Siphon apple wine into a clean bucket to combine with the thawed apple juice concentrate, then bottle in plastic bottles.
3. Freeze the bottles for 2 days.
4. Add a clean object (shot glass, measuring cup, etc.) to the bottom of large cups that will catch the runoff apple jack. Open your frozen bottles, tip them into your cups and let them drain at room temp, or in the refrigerator until the ice left over is mostly white.
5. Collect all the drained apple jack and save. Rinse the remaining ice out of your bottles, then refill with apple jack and refreeze.
6. Repeat steps 3 thru 5 until the apple jack no longer freezes, or is not frozen enough to keep the ice in the bottle. Usually 3 to 4 freezes will do it.
7. Bottle your finished apple jack and enjoy in moderation unless you enjoy hangovers:-)

    BEFORE YOU RUSH TO WARN US ALL ABOUT METHANOL READ THIS: Here' s a company that makes a commercial version of Apple Jack produced through freeze distilling. www.alcohollery.com/Spirit There is no way that this distillery could produce Apple Jack by freeze distillation if it had dangerous levels of methanol. The TTB and ATF regulate the alcohol industry very strictly. It can take months to get recipe approval for a single spirit. For that approval a distillery must submit samples of the spirit, beer or wine to be tested for, among other things, methanol content. It is a fact that the level of methanol in apple jack is not dangerous. Calm down.

    You'd think so, but I've had a lot of folks with their hair on fire telling me I'm going to kill people. They hear the word methanol and freak out. It's just misunderstandings and myths that take root. Hopefully this will help:-)

    Well, as I remember from school, cold makes reactions less likely to happen. So, if freezing coul increase methanol-content, then all ethanol would sooner or later turn to methanol just from being stored. We know for a fact that this does not happen. And thus, jacking cider does not change the ratio of ethanol/methanol.

    One fun thing with applejack... Add some dry ice to chill and carbonate it. Then chill a stainless steel bowl with some more dry ice. Pour a little in the super cold stainless bowl and it will freeze as it bubbles. The resulting chips are best used as garnish on vanilla ice cream

    rubberman302 easy peasy, buster: 5 gallon food grade bucket, with a bung lid and and air lock, start with three gallons of fresh apple cider, 2 pounds of sugar, and 1 envelope of Cuvée yeast. Do your first ferment in the house, rack it, then put it out on the porch. Every time it freezes, peel the lid back, pull off the ice freezes. Continue doing this until no more ice forms, then bottle. Don’t let your alcoholic uncle know you’re doing this, or it will be disappeared whilst you sleep.

    Feedback Everyone: I made this apple jack. It works. Although my attempt was not as slick/flawless as Bearded & Bored's video, it did result in some tasty "apple whisky" or whatever. Fun experience. I recommend.

    First heard of this technique way back in the early 80s where it was referred to as making "Winter Wine". Basically the same thing only using wine instead of hard cider. Rather than using such small water bottles, a regular 5 gal bucket was used and placed in a chest freezer where the ice that formed on top was easier to remove rather than draining those tiny bottles over and over again.

    I knew a guy in upstate New York. He had a few apple trees on his property. He would fill up a barrel with the apples and make cider. He told me that the apples had a natural yeast on them and that would make the cider hard. In the winter he would skim off the ice on top of the cider. Thanks for bringing back a memory.

    Holy shit......one of my best friends "accidentally" made this back in the day. We were at his place and he had made hard cider that he was freezing to kill off any excess yeast or something like that and we had run out of beer. He told me about the cider and it poured the bit that hadn't frozen into a mug, it was sweet but also very sour and strong as hell. We dubbed it "Apple Fuck" because it fucked me up. haha Man, I miss that guy. RIP Dan.

    I do a 5 gallon run of this in the fall. When I do my fermentation I like to throw 3-4 cinnamon sticks, 4-6 hole cloves in then let sit. This year I added 2 cups honey and 2 concentrated frozen orange juice cans in. Oh boy I made something special.

    So after some experimentation I have succeeded in making a lemon drop Jack using this same process. I promised you that I would keep you updated. Basically you start off by creating the strongest sweetest homemade lemonade that you possibly can. And then just like with the Jack you are going to add your yeast to the mix and then cap it with your burp valve. It doesn't start to Bubble for about two to two-and-a-half weeks and honestly I let it sit for almost 2 months. Don't know if it needs to sit that long I just got busy with other things and forgot about it. Siphon it out and put it into your containers that you are going to use for freezing it. Just like with Applejack keep straining and freezing until it no longer freezes. Then put the new filtered liquid into one container and add copious amounts of sugar. I think I ended up adding about a cup to a cup and a half of white sugar. Shake until completely dissolved. Pour into 750ml mason jars and add a couple slices of lemon to each jar. You should end up with two 750ml mason jars. Let it sit again in the refrigerator for about a week before you drink it. It's really freaking good. I think my next Jack experiment is going to see if I can make a decent pina colada Jack

    For lemon, start with a complimentary fruit wine. Like cherry or strawberry. When you rack it out of the primary, build your lemonade in the leftovers in the primary fermenter. The yeast tends to take right off, and the resulting lemonade is the best.

    I had this same thing in Germany. They called it Apple core there. Anyways the last thing I remember is the third one. I woke up at 2pm the next day in my friends car.     I drank half a pint of that Devils nectar and got my head stuck in the sliding doors of a moving London underground train. I had to run sideways for 100 yards with my head stuck, until the passengers stopped laughing and pulled me in just before the platform ended. Its was great.

    Stick it on the stove and heat it at 146 F for 20 mins to get off the methanol and reduce the apple palsy lol. Ive done this before and it only made it a little less smooth.. I think the methanol makes it better taste wise but not for the next morning

    So I'd actually bump the heat up slightly to 150 for safety sake. I know the boiling point is 148, but I'd want to be DAMN sure. I don't want to risk methanol poisoning, personally. Wood alcohol will fuck your life.

    I'm an Aussie living in a sustenance living village in Hungary. When I first came over in 2014, the neighbours invited me to a planting celebration. They had these tiny glasses, I'd never seen before and gave me the same as everyone else. It was palinka...home made...the national drink.That sip I took, tasted like lighter fluid and I lost 3hours. I have no idea what happened. I can vaguely remember being...but it took 3 hours for me to regain my senses. One sip!!! Obviously, I'm not a spirits drinker! PS...I thought apple jack was a cake!

    the ratio of methanol and other stuff to ethanol will be the same as in some cider or beer. It's just easier to drink half a fifth of hard alcohol than it is to drink a ton of cider, and since the water content is a lot higher in cider that would also make the hangover not as bad.

    Yah, not really. While there is a far off thread of reality the whole "blind" thing is 99.9% urban myth spread to try and stop people from drinking during prohibition. Drinking pure methanol can be lethal and or blinding but we are talking a very small fraction of a percent here. Most of the bad effects of "bootleg liquor" were because of really stupid and dangerous practices like adding methanol to the hootch for a bigger kick and using old radiators for condensing coils adding lead and old antifreeze into the mix.

    I tried this recently, altough I wasn't able to achieve that high % with my freezer, it was indeed very tasty! I would say I got it around 25-28% which is not bad considering I didn't even run my freezer on full blast!

    @@tariqmalik8073 Concentrate, but of course freshly pressed juice or just using fresh apples will give a bit tastier results especially because of the skins, just remember that apple seeds are poisonous and thus they have to be removed. Also I must remind you that because this method is basically cold extraction, it will become sweeter the denser the solution gets on each round of freezing and melting, so I recommend making it from dry or almost dry wine unless you like it really sweet. And be careful buddy, it doesn't burn almost at all when you drink it, so it's very easy to drink too much! :)

    I did a blackberry Apple Jack. I used apple cider and blackberry juice and cane sugar and cider yeast. Got it to 16% and using my deep freezer I got it almost to 80 proof. It was very smooth and not suriply and also not dry. Dry would be nice. Next time I will use brown sugar. I would drink 4 to 6 ounces of the Apple Jack at a time. I never got a hangover from it but I also drink extra water when I drink alcohol. I also don't use sulfates which can give you a hangover. What I make doesn't stay around long enough to need preservatives.

    Worst hangover I've ever had was from ice wine. I've also put down a gallon hard cider in an evening. It was at a wedding with an open bar. Local cider/wine company supplied the bottles. The family kept track, and I drank well over a gallon.

    I love this. As a kid I lived on the west coast, in an area that grew apples commercially and sold both beer and cider in bars ... and cheap fortified wines called 'Apple Jack' and 'Double Jack'. Very cheap, just what a 'young adult' wanted. Cut to the early eighties and I'm living on the east coast of Canada, in an area of small farms, each of which has abandoned apple trees in its tree lines. I used to pick apples enough for gallons of both sweet and hard cider and, of course, I had to freeze all that I could...then I began the redux by heat method and slowly both apple jack, and then apples, fell out of favor. Just as my making beer from grains I malted slowly disappeared...just too much time when I was working long days at a job (or jobs). Maybe I have to reconsider that abandonment.

    Your the first bloke I've heard besides my dad whom mentioned fuzel oils. Aparently ethonol and methanol are considered waxes. The longer the molecular chains are, the harder it is for your liver to break down therefore it gives you a great buzz but it sozzles your brain. Badly made moonshine you can see the oil slick on top. That is why when distilling you throw away the heads and tails removing the fuzels with it and why the process of freezing to concentrate alc does not remove them. This is also the reason beer and wine will give you a richer pissed feeling, and why you can consume more vodka which is cleaner than rum without getting mind bendingly pissed. Aparently its the fuzels that most alcoholics are addicted too and a very clean ethonol can ween them off the booze. Or so I've heard.

    Yeah, folks constantly ask about heating the AJ on the stove top to boil off the methanol and I have to tell them even if that were possible, it sort of is and isn't, the fusel oils are heavier, won't boil out and will mess you up just as bad. Everybody gets hung up on the methanol.

    @@BeardedBored Yes they do. Booze making produces ethanol with a tiny fraction of methanol. I find it impossible to believe the methanol produced in yeast brewing could possibly have a huge ill effect although thats a little irresponsible to say as it depends on how much and how regularly one drinks. Methanol is a wood alcohol I believe. Then again when someone has drunk far too much and there overloaded the fuzels end up in your brain causing worse inflammation and thus the hangover as i understand it. Perhaps we ought not get so pissed. It's a sign. 🚫 I enjoy a drink or five but I never ever get rolling drunk there days. That happened in my early days of distilling and drinking. Blah.

    I used to make this in North Dakota all the time, lived in a man camp in the middle of nowhere, no transportation, no alchohol allowed. Apple juice, sugar packets, bread yeast, and piles of snow to freeze the bottles in.

    @@johns2926 the "man camps" is where all the oilfield workers would live during the oil boom, drilling for oil in remote locations like North Dakota. We would have camps with up to 800 people living in them, your room is the size of a jail cell, and you use public showers. Far from awesome lol. Just a place to sleep, people would work 15+ hours days, 7 days a week.

    If you want the metanol out just warm it up to 76,1C° for maby 5-10 min. Then most of the metanol is damped off. 😉

    I agree completely! That is why when you distill moonshine, you toss out the first runnings called the "heads" which is all of the methanol stuff. Methanol boils off at 148.46 F. Alcohol does not boil out until it reaches about 173.1 F. So, it stands to reason that if you heat your applejack to 170 F for a few minutes the methanol will all evaporate out of the mixture. Clearly, this means you MUST have good control over the heating process. Cuz if you heat much past 173 F you will lose some or all of the ethanol (which is the good stuff!)

    @@kingfisherblues57 if you heat it up slowly enough, and maybe stir it as you do. Once it reaches about 65C, the temperature rise should significantly slow down. Then, when the temperature begin to rise again, you would have removed most of the methanol. You are basically distilling your applejack, but instead of keeping the product, you are simply letting it float away into the air.

    Used bulk aged cherry mead at 18%abv. Added tart cherry extract and simple syrup before freezing. Best KUNGFLU party u can have with your clothes on. Kudos Bearded one

    Great video! There is an easier and less messy method for those with limited freezer space - put your product into a one gallon milk jug. Fill the jug just below the lower part of the handle to allow for the expansion of the ice. Fill with product and place the jug into your freezer. Once an hour, open your freezer and give your jug a few vigorous shakes - this causes the ice within the slush to compact together forming a larger and larger ice ball within the jug. When you have formed a ball the size of a softball, empty the jug into a second milk jug, dispose of the ice, and place the jug back in your freezer. When you have reached the point where the slush will not coalesce, either strain the remaining ice or enjoy your beverage in its icy state. No need to transfer product in and out of small bottles and you can process as one large batch. I would recommend using only milk jugs as the plastic is flexible and allows for unexpected ice expansion without breaching the container. Also, the ice will not stick to the inside of the container, so you can shake or push the ice away from the opening making it fast and easy to drain.

    I wanted to share another follow-up. I made a mistake on one of my batches of Apple Jack. It came out having a strong over ripe banana flavor. With all of my Apple Jacks, I enjoy setting some aside to blend with whisky. I'm a fan of Apple pie whisky as a desert drink. With this particular batch, I've done two blends. One is with a 12 year old blended Canadian whisky. After a month, that one transitioned from strong oak, banana, to oak, peach. The other is blended with a blended scotch. That one has strong pear notes. I'm having a lot of fun blending my backsweetened freezer jacks, with different spirits. There are some incredibly unique liqueurs one can make from playing with the concentrated flavors that are created with freezer jacking.

    @@BeardedBored we both worked in kitchens in our former lives. There is nothing that passes my eager tongue, that does not get put in an experimental concoction. It's the nature of the foodie/creator. There is a never-ending panorama of flavors to explore and discover. Here is another Apple Jack experiment that went extremely well. I marinated a pork shoulder in a mixture of Apple Jack, brown sugar, and Mesquite BBQ seasonings. Then dumped the whole thing into a 450 degree pre heated Dutch oven. Turned the temp down to 280 for 5 hours. Fall off the bone, sweet pork. 😋 Made for an amazing taco Tuesday.

    B&B: I just finished the sixth freeze cycle on my first batch of Apple Jack and declared it “done.” Had a small snifter with the wife to test. Holy cow! THIS STUFF IS AWESOME! My wife dislikes most adult beverages and even she agreed that this is silky smooth, rich and wonderfully full of apple flavor. Thanks for sharing this video. One question: Is this shelf stable or should it be refrigerated? Thanks again.

    Congrats! Glad it was a success:-) It's shelf stable in that it won't spoil, but the refrigerator will preserve the flavor for much longer.

    I just wanted to let you know, that it is finished now and it is.....DELICIOUS!! WoW!! It really does taste sweeter on its own after all is said and done. It is also OMG STRONG but tastes FANTASTIC!! Thank you for your advise, I'm so glad I didn't add in any more sweetening as it would have definitely been wayyy too sweet. Thank you for sharing a wonderful recipe with us all!! Its thee first drink I've ever made and it is awesome!! Tytyty!! I added some black cherry extract (from Olive Nation) to 1 of the bottles and its just unbelievably excellent!! Happy distilling!! I am sooo happy about how this turned out!! 😁😊🍻Cherrs!! 🌷

    I've tried this and it's all some. But then I've been making wine and meads for several years now. And have been known for taking what is leftover from racking. Place in a water bottle and freezing. Some mixing of brews wine or mead and freezing. IT always comes out amazing, but don't drink to much. It acts fast, there for a little goods a long way. Love watching this process over and over. Just to keep things fresh on my mind.

    I've been making this for years from apple cider and apple juice concentrate mix with granulated brown sugar. After making a couple of liters, I heat it up to 168 degrees, release all of the methanol and quickly give the pot an ice bath to retain the alcohol that is in it. I bottle and rack it once or twice to clarify it to the point where I get 1.5 liters of clear incredibly tasty applejack that is most appreciated during the holiday season. There is no hangover once I am done but it is dangerous due to the flavor and smoothness, basically, if you get addicted to the flavor, you better lay down before you start drinking it, because you will end up down from it eventually! .It is the best damn liquor out there. Has the most flavor , is so smooth and gets close to 90 proof once cooked down to get the methanol out. Put your freezer on it's lowest setting to get the most alcohol out, but remember, you'll also have more methanol so get as much out as you can and quickly cool as to not lose the ethyl alcohol which will boil at 173 degrees F. When heating liquids, temps will keep rising once you cut off the heat so an instant ice bath must be set up for instant cooling. I recommend putting a lid on it immediately after the temp reaches 168 because it will get to 172 degrees before it cools and you will lose a large portion of alcohol if you don't cover it. Try it, it's so good , ladies will like it , men will love it, hell, everybody will love it because it is absolutely without a doubt the tastiest fruit liquor you will ever taste. It is like an apple pie on steroids, but gives you a great buzz and warm feeling that is indescribable.
